NOTES FROM OUR SOMMELIERS

👁 a beautiful straw yellow, fine and persistent bubbles;

👃🏻 the nose expresses itself on light notes of white flowers, beautiful mineral notes and raspberry, a peculiarity given precisely by the presence of the Côt grape variety.

👄 on the palate it is fine and elegant with an excellent balance between softness and freshness.


RECOMMENDED COMBINATION


It goes perfectly with fish and land starters and is excellent with anchovies and sardine terrine. For a vegan solution, try it paired with raw vegetables.


REFINEMENT

Ancestral method sparkling wine, biodynamic certified, whose grapes (90% Melon de Bourgogne, 10% Côt) grow in clayey Sicilian soils. The presence of sugar is the one naturally contained in the grapes which initiates fermentation and second fermentation. At the end of the harvest, the grapes are immediately pressed and after a night of racking, fermentation begins at a controlled temperature with only indigenous yeasts.

TERRITORY OF ORIGIN

TERROR

We are in the Loire , a region legendary for its wines and its castles . In the Loire Valley we can talk about viticulture starting from the 5th century BC, with the Romans who founded Paulica Villa, today's Pouilly-sur-Loire, and planted the first vineyards in Saumur and Sancerre. The climate is very varied: on the coast the temperatures are milder, the humidity is good but sometimes dangerous spring frosts occur, while as you move inland the climate becomes more and more continental, with short summers and warmer temperatures, colder winters and increasing temperature variations.

The soils are also very different from one area to another: they range from granites mixed with sand in the Muscadet area, to red shale and slate in the Anjou area, to gravel and sand in Chinon. And above all to the chalk of Saumur and Vouvray, which gives wines rich in minerality, and to the clay and chalk of Sancerre and Pouilly. Grapes such as melon de Bourgogne, sauvignon blanc, chenin blanc, chasselas, gros blanc, cabernet franc, gamay, grolleau and cabernet sauvignon are grown here.


CELLAR

We are in the heart of the Muscadet Sevre et Maine appellation, in Le Fay d'Homme near Monnières. The Caillé family has been cultivating the vineyard and producing wine for 5 generations, but the turning point came in the 1980s.

Vincent Caillé, the current owner, took over the family vineyard in 1986 and for twenty years has decided to move towards a more sustainable type of agriculture, to produce genuine and excellent quality wines, obtaining the organic certification in 2007 and the biodynamic five years later.
