👁 A beautiful straw yellow colour with fine and continuous perlage.

👃🏻 The nose is delicate and elegant and expresses itself mainly on floral and white-fleshed fruit notes;

👄 on the palate it is savoury and mineral thanks to the volcanic soils from which it originates; long finish.

FOOD PAIRINGS

A bubbly with fresh and fragrant aromas, savoury and saline on the palate. Savouriness and softness make this sparkling wine versatile in pairing with delicately flavoured dishes. As an aperitif it can be successfully paired with fresh cheeses and seafood crudités. Try it with fish with a good presence of fat, such as salmon. Also to be tried as an accompaniment to sushi.

This fresh, indigenous sparkling wine is made from grapes of the indigenous Garganega grape grown in the hills on basalt soils in the Soave area of Veneto. A sparkling wine produced with the Martinotti Method.

ORIGIN

TERROIR

The Balestri Valda vineyards lie within a large volcanic-tectonic basin bounded to the west by the Castelvero line and to the east by the Schio-Vicenza line. There is a profound relationship between soils composed of basalts and the richness of taste found in the glass. Basalts are volcanic rocks formed by successive cycles of eruptions over three geological cycles in an underwater environment. The eruptions gave rise to volcanoclastic products of different colours ranging from grey to yellow to red, depending on the environment of formation and the degree of oxidation. The action of exogenous agents then modelled the landscape, giving rise to the beauty of the area we see today.

Basalts poor in silicon and rich in magnesium and iron tend to absorb between 85% and 99% of the phosphates added to these rocks, which have strong draining capacities.

But there is more to the soils of Balestri Valda than basalt: the black stone mixes with the white limestone to create a blend of minerals from which the vines benefit greatly. The limestones are what remains of ancient submarine beds; these sediments, rich in calico carbonate, deposited on the seabed and trapped animals and shells that we can still recognise today in fossils of the most curious and varied shapes.

WINERY

In the heart of Soave Classico, the story of the Balestri Valda winery begins with Guido Rizzotto. But from the age of 22 to the present day, it is his very young daughter Laura Rizzotto who carries Balestri Valda forward with personality, an extreme love for the environment and ever new ideas. Following the principles of organic farming, they produce 8 wines, have a beautiful wine cellar - energy autonomous -, an orchard with ancient varieties in danger of extinction and bees, Laura's real obsession. Her aim, in the vineyard and in the cellar, is to demonstrate that it is possible to be sustainable and produce wines of the highest quality without renouncing the wholesomeness of the products and the beauty of the landscape, in a balance between man and nature that you can breathe when visiting the estate.
