Production and refinement

100% Viognier grown on a clay-limestone soil, in a warm Mediterranean climate influenced by altitude in the Minervois hills. The Mediterranean scrub and rocky soils contribute to the wine's balance and structure. Mechanical harvesting followed by grape selection.

Maceration followed by alcoholic fermentation in steel. The wine ages on its lees and completes its aging in steel to preserve freshness and complexity. The Viognier is aged on the lees and in steel, maintaining the softness, fruitiness, and elegance typical of this variety.

Domaine Sibille

In December 2015, Barbara and Pierre founded Domaine Sibille in Laure-Minervois, in the Aude region of France. A small organic estate at the foot of the Montagne Noire, they took over and worked just over 15 hectares of vines: 5 hectares under the protected designation of origin (DOP) Minervois and 10 hectares under the protected geographical indication (IGP) Pays d'Oc. 60% of the vineyard produces red and rosé wines, while 40% produces white wines. The potential production is 80,000 bottles, though it depends on the vintage. The soil expresses itself through a sandstone terroir, which brings freshness and structure to the wines. Only Viognier and Pays d'Oc are grown on clay-limestone soils.

Domaine Sibille

They prefer manual harvesting for reds, rosés, and some white wines, and they work to keep added sulfites to a minimum. For reds, macerations can last up to two months, while for whites, aging on the lees naturally imparts the wines with depth and complexity. The wines of the Maison are not austere, but rather fruit-forward and reflective of the terroir and grape expression. The vineyard showcases various grape varieties:
- For reds and rosés: Grenache for finesse, old Carignan for authenticity, Syrah for fruit, Mourvèdre and Piquepoul Noir for their ability to produce great rosés, and Marselan for originality and discovery.
- For whites: Viognier and Chardonnay are the dominant varieties.

Languedoc-Roussillon

The Languedoc-Roussillon region is located in southern France and overlooks the Mediterranean Sea. It is one of the largest and most productive regions in all of France (accounting for over a third of the country's total wine production), with a production that in recent years has increasingly focused on quality.

The wine region, home to several AOCs (Appellation d’Origine Contrôlée), is divided into two distinct areas: Languedoc, further east, mostly flat, and Roussillon, further south near the Pyrenees.

The climate is Mediterranean and warm. In fact, on the southern coast of France, we find one of the most favorable microclimates for grape cultivation, although there are also some rather cool areas, such as the hills of Minervois and Limoux, where temperatures are lower due to slightly higher altitude.

The soils are mainly limestone, schist, and stony, forming the characteristic garrigues, a rocky landscape interspersed with lush Mediterranean scrubland. In these soils, Syrah and Carignan thrive and produce wines rich in structure, tannins, and salinity. In the plains, on the other hand, the soils are alluvial and fertile, mainly cultivating Grenache, Cinsault, and Muscat grapes, resulting in wines richer in alcohol.

The majority of the wine produced in the region belongs to the Vins de Pays category, but there are numerous oenological subzones, each producing wines with unique characteristics. Among these, the most productive are Corbières and Coteaux du Languedoc, where mainly red indigenous and international grape varieties are vinified.

Also interesting is the Limoux area, where excellent sparkling wines are produced: the Crémant and the Blanquette de Limoux with the traditional method, but also an excellent ancestral wine produced with the rural method.

The most characteristic wines of the region are the vins doux naturels, produced by fortifying the must through the addition of alcohol (a process called mutage).

Minervois

Minervois is a denomination located in the western part of Languedoc, France, renowned for its distinctive red wines, which are generally softer compared to those produced in the neighboring Corbières. In addition to red wines, the appellation also produces rosés and whites.

The region covers a vast area extending north of an imaginary line drawn between Carcassonne to the west and Narbonne to the east:
- To the north, the vineyards are bordered by the slopes at the base of the Montagne Noire mountain range, while to the south, they adjoin Corbières.
- To the west, the border is with Cabardès, and to the northeast, Saint-Chinian and Muscat de Saint-Jean-de-Minervois.
- In the center of the appellation lie six communes around La Livinière, forming the Minervois La Livinière, an independent appellation known for producing high-quality wines.

The appellation is divided into five climatic zones:
1. Côtes Noires, located in the northwest, is the coolest area influenced by the Atlantic and situated at the base of the Montagne Noire.
2. La Clamoux is found on alluvial terraces and flat lands in the southwest, near Carcassonne.
3. La Zone Centrale lies in the center of the appellation at approximately 400 meters of altitude.
4. Le Causse is located in the northeast with poor, dry soils.
5. Les Serres is the warmest and most Mediterranean area, situated in the southeast.

Within Le Causse, the 350 hectares of vineyards of the Minervois La Livinière AOP are located, characterized by clay and marl soils over limestone, rich in Mediterranean vegetation.

The main grape varieties used for AOC Minervois red and rosé wines are Grenache, Syrah, Mourvèdre, and Lledoner Pelut, along with other varieties like Carignan, Cinsaut, Piquepoul Noir, Rivairenc, and Terret Noir.
