👁 Intense ruby ​​red;

👃🏻 the nose expresses a very intense bouquet, with notes of ripe fruit, blackberry, plum and raisins;

👄 on the palate it has a good structure, intense and round with well-integrated tannins and a persistent finish. Suitable for aging, it offers complexity and elegance as the years pass.


RECOMMENDED COMBINATION

A red with great complexity of flavor and structure, which goes perfectly with a wide range of dishes, which must have the same structure and character. To be tried with rich and tasty dishes, such as roast red meat, game, mature cheeses and mushroom dishes. Its structure and complexity also make it ideal with pasta dishes seasoned with robust sauces, such as meat ragù or wild boar sauce. Also excellent with mature cheeses.


REFINEMENT

The grapes are harvested by hand with traditional buckets, the harvest is late, in mid-October, from vines over 15 years old. Bunches left in the sun and then crushed directly in the bins with a stick. Fermentation takes place with stems and skins for about 10 days. The pressing is manual and the wine is moved by gravity and without pumps.

Fermentation and maturation take place in chestnut barrels and barrels for 8 months, using an archaeological method, giving the wine a unique character. The production process is natural, without herbicides or pesticides, without sulphites added in the cellar or filtering.

TERRITORY OF ORIGIN

TERROR

Tuscany is unique for growing grapes. The history is centuries old, being a civilized land since the times of the Etruscans.

The farm is located in Montespertoli, an area that falls entirely within the Chianti area and hosts two main sub-areas: the Chianti Colli Fiorentini DOCG and the Chianti Montespertoli DOCG. We also produce Vinsanto del Chianti DOCG and Vinsanto del Chianti Montespertoli DOCG and IGT wines. It is one of the areas of Tuscany with the largest vineyard area, there are 1600 hectares dedicated to the cultivation of vines, of which 1400 are cultivated with Chianti DOCG.

The "capitals" of Chianti are the cities of Florence and Siena and its lands extend right between the two provinces: it is 70,000 hectares which entirely include the municipalities of Castellina in Chianti, Gaiole in Chianti, Greve in Chianti , Radda in Chianti and partly those of Barberino Tavarnelle, Castelnuovo Berardenga, Poggibonsi and San Casciano in Val di Pesa. The vineyards are exposed to the south and west at 360-530 meters above sea level. The soil is made up of marl limestone, marl shale, clay shale and, subordinately, sandstone. The skeleton is essentially composed of alberese and galestro, ideal for Sangiovese, and sandstone and clay in some single vineyards such as Casi. Sangiovese, the main grape variety of the region, is a great interpreter of the unique characteristics of the land of the Gallo Nero.


CELLAR

Guido Gualandi specialized in the research, replanting and valorisation of ancient vines such as Sangiovese, Abrusco, Foglia Tonda, Aleatico, Colorino, various Trebbianos, Malvasias and Puntitello, grown in his area, the Chianti Colli Fiorentini, in the municipality of Montespertoli in the province from Florence.

He applies his own method, which is to intervene as little as possible on his wines. It adopts fermentation together with the stalks and manual pressing at the press. Thanks to his research, in the vineyard and in the cellar, and to his dedication, Guido today produces wines of great drinkability and originality. They are wines that he calls "archaeological" because they have their roots in the centuries-old customs of Tuscany. In four hectares of vineyards, he produces a new and ancient wine at the same time, giving up the tractor whenever possible, and preferring manual processing.

The winery specializes in the winemaking of native vines, including ancient clones such as Sangiovese Abrusco, Foglia Tonda and Puntitello. These vines had been abandoned for more than a century, but were rediscovered by the University of Florence about twenty years ago and adopted by Guido Gualandi.

The winery is very committed to respecting the environment: the water used is recycled; heating and hot water are produced by solar energy; electricity is produced by photovoltaic panels; for working the fields (in addition to wine, the company produces oil) they favor manual work, minimizing the use of the tractor.

The company is biological  since 2008.
