👁 a beautiful ripe ruby red;

👃🏻 on the nose, sweet and pulpy red fruit marries with sweet spices to then give way to notes of medicinal herbs and delicately spiced;

👄 the palate is full and satisfying. The excellently structured body finds in the acid thrust the right complement to its harmony, turning out soft but equally agile.

 

FOOD PAIRING

Valpolicella Ripasso is an intense, complex and persistent wine. It prefers full-bodied and succulent dishes. It pairs perfectly with stracotti and braised meats with polenta, game, sliced beef with porcini mushrooms, lamb chops and medium-aged cheeses.

 
REFINEMENT

A blend of Corvina, Rondinella and molinara harvested by hand depending on the vintage, between the last decade of September and the first of October. The grapes are crushed and macerated in stainless steel fermenters for 10-12 days.
Once alcoholic fermentation is complete, the new wine is separated from the skins and stored in steel tanks until January, when the dried grapes are pressed to produce Amarone.
At this point the Valpolicella is "repassed" on the Amarone pomace with a 7 to 8-day soak at a temperature of 25 to 28°C. The wine then ages 12 months in tonneaux and 20-hectoliter barrels.

ORIGIN

TERROIR

We are in Valpolicella, in the province of Verona among hills and from valleys north of the city of Verona, in the Veneto region of Italy. It stretches from the Adige River valley on its western side to the volcanic territories of the Soave production area to the east. Valpolicella is a controlled designation of origin (DOC - DOCG) area and includes 3 subzones: Valpolicella Classica, Valpantena, and Estesa.
The landscape is extremely rich due to the presence of a morphologically varied territory that can be divided into three macro-areas: the mountainous limestone area, formed by the Lessini Mountains; the hilly belt, which houses most of the vineyard and vine area; and the valley floor area.
Consisting of valleys that run north-south, Valpolicella is ideally presented as a fan of valleys starting from Verona. The landscape is predominantly hilly, with gentle slopes and watersheds at low elevations, and is dominated almost everywhere by vineyards, interspersed with olive and cherry trees.
The unique and varied geological and climatic characteristics of the area are the basis of the great uniqueness and typicality of its wines.


WINERY

The Dal Cero brothers are distinguished by something rare: they don't miss a beat. Whether we are talking about the Tenuta di Corte Giacobbe in Roncà, the Tenuta Montecchiesi in Cortona, or the latest addition, the new property in Valpolicella. Their story begins in the 1930s with Grandpa Augusto and proceeds apace thanks to Nico, Francesca and Davide.
Their wines have distinct personalities, but tasting, for example, two wines from the same estate, one feels a clearly recognizable and distinctive common thread.
The territorial imprint is what makes the difference, that territory that they so respect and value. The Dal Cero brothers are the most tangible sign of the continuity of work within a family: respect for the values of the land, sustainability, a direct relationship with the soil and its qualities.
