👁 An intense ruby red;

A wine that goes very well with dishes with succulence, intensity and persistence. Try it with important meat dishes such as roasts and game.

WINE-MAKING AND REFINEMENT

Consisting mainly of Sangiovese combined with other red berried grapes from the vineyards of the winery near Sovana that grow on tuff soils, with low organic fertility but rich in minerals such as potassium and magnesium. The grapes are harvested separately and selected manually. Fermentation takes place without the addition of yeasts and lasts between 15 and 20 days. Matures for a few months in steel.

ORIGIN

TERROIR

The winery is located between the municipalities of Sorano and Pitigliano. Altimetrically, the area is considered a "hill", but it appears as a succession of high lands, interspersed with deep gorges dug into the tuff by inconstant watercourses.

We are on the foothills of the volcanic basin of Bolsena and the tuff is the guiding material: the vineyards are planted on the tuff, the houses are made of tuff, the cellar is dug out of the tuff. Seen from above, Lake Bolsena clearly reveals its volcanic origin, having an almost perfectly oval shape. In fact, it was formed after the sinking of a crater about 300,000 years ago. Lake Bolsena is a unique terroir for the cultivation of vines, which draws a unique minerality from volcanic soils.


WINERY

The winery is located between the municipalities of Sorano and Pitigliano, on the slopes of the Bolsena volcanic basin where the presence of tuff is uninterrupted. It falls within the DOC Bianco di Pitigliano, Sovana and Maremma Toscana. The vineyards now occupy a total area of about 12 hectares cultivated organically since 1994: 9 with red grapes (Ciliegiolo, Sangiovese, Teroldego and Merlot) and 3 with white grapes (Trebbiano, Greco, Sauvignon).

In 1990 Edoardo Ventimiglia and Carla Benini (agronomist) arrived in Sovana to find a hectare of vineyard, a broken-down house, 70 hectares of land that had been abandoned for years. Their first harvest dates back to 1997 and they have been working with passion ever since. This geological characteristic, i.e. the volcanic origin, makes their wines mineral and of great structure.

They work with the oenologist Attilio Pagli.
