Production and refinement

Chardonnay in purity from a single vineyard in the “Costiöla” area, planted in 1980. Vines are trained using the simple Trentino pergola method. The soils consist of glacial deposits with sub-rounded polygenic pebbles in an abundant reddish silty-clay matrix. Hand-harvested.

Fermentation of the base wine takes place in stainless steel. The whole grapes are gently pressed at temperatures below 18°C. Vinification follows the Traditional Method, with 114 months sur lie in an underground cellar subject to seasonal temperature variations from 12°C to 20°C. Time plays a crucial role in yeast autolysis and the evolution of this very special sparkling wine.

Visual exam

A beautiful deep straw yellow color, very distinctive, with extremely fine perlage.

Olfactory examination

On the nose, it reveals broad and complex aromas, reminiscent of fresh white fruit, bread crust, as well as licorice, ginger, and flint.

Tasting

On the palate, it stands out for its freshness, vibrancy, and complex flavors; it is creamy and light, with toasted notes of oak and tobacco. The long, salty finish invites a mindful tasting, exploring the myriad sensations this wine offers.

In the municipality of Lavis, on the outskirts of Trento, the Spumantificio Piffer has quickly made a name for itself in the world of Trentodoc sparkling wines. Founded by Vito Piffer, an oenologist with over 30 years of experience, this family-run winery combines technical expertise, a deep love for the region, and a profound understanding of local geology.

With just 1.7 hectares of vineyards, the winery focuses on enhancing two of Trentino’s most prestigious terroirs: the porphyric soils of the Cembra Valley (Vulcanite), which impart pronounced minerality and freshness, and the polymorphic soils of the Morainic Hills in the Adige Valley (Diamicton), celebrated for their structural complexity. This detailed study of the terrain has led to the creation of three labels, each showcasing the distinctive character of these unique areas.

Lavis, with its sun-drenched vineyards and the influence of the Avisio stream, is the beating heart of this winery, where each sparkling wine is crafted with a tailored approach: the harvests are done by hand, and the vinification process respects the organoleptic qualities of the grapes. Trentino Alto Adige is a region entirely mountainous and divided into the autonomous provinces of Trento and Bolzano, whose border marks a linguistic and administrative watershed.

The attention of wineries and heroic viticulture ensures a consistently high quality level of wines, and particularly the best results are achieved with grapes that thrive in cold climates, such as Sauvignon and Pinot Noir, which here express their varietal characteristics at their best. In addition to the many international varieties, the region also boasts an interesting heritage of native grapes, including Teroldego, Schiava, and Lagrein.

Although it would be difficult to draw a morphological boundary between the two areas geographically, ethnic and linguistic differences on one hand and pedoclimatic differences on the other have also led, over the centuries, to a provincial characterization of wine production.

Both areas, however, share an excellent wine production, thanks also to the geographic position and favorable climatic conditions along the Adige Valley and on the slopes of the mountains that line it, as well as in the flat and hilly areas around Trento and Bolzano.

The Trento area, in addition to its Trento DOC sparkling wines, is famous for its elegant white wines, typical of grape cultivation in high-altitude terrain.

This territory is distinguished by elegant wines that express a unique concept of territoriality. The success and peculiarity of Trento DOC sparkling wine are due precisely to the characteristics of the territory: the combination of climate, different altitudes, terrain, and Trentino know-how make it not just a simple sparkling wine, but a highly esteemed mountain sparkling wine, increasingly recognized and awarded.

Despite its small size, the Trentino region is covered with 10,000 hectares of vineyards, with a percentage of grapes destined for sparkling wine production accounting for 8% and an annual production of 7 million bottles.

The vineyards benefit from different climates: from a mountain microclimate to the milder one of Lake Garda. Factors such as vineyard altitude and temperature variation play an important role in grape ripening, influencing the organoleptic characteristics of the wines.

The varieties cultivated for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The area of organic vineyards in Trentino is steadily increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards product healthiness.
