Production and refinement

100% Pinot Nero, vinified as a white wine. The vines take root in a sandy loam-clay soil with scattered gravel and pebbles, located in Ala, Trentino, amidst the Dolomites. Manual harvest in September ensures the perfect freshness of the grapes.

Fermentation at controlled temperature in stainless steel for 8 months. Classic Method vinification: secondary fermentation in bottle and aging on the lees for at least 50 months, with manual remouage, which imparts complexity and persistence.

Of a beautiful intense straw yellow with golden reflections, fine and persistent perlage that reflects structure and elegance.

Olfactory examination

On the nose, it is intensely fruity with notes of yellow fruit, almond, bread crust, and dried pastry, enhanced by a mineral touch that adds complexity and charm to the aromatic profile.

Tasting

On the palate, it is fresh and salty, with an elegant and persistent finish. The fruity notes on the nose reappear, delivering an intense and harmonious tasting experience.

Borgo dei Posseri

Borgo dei Posseri, located in Ala, Trentino Dolomites, covers a vineyard area of 21 hectares, surrounded by forests, meadows, and pastures. The previously used grazing lands have been transformed into vineyards since 2000, employing cutting-edge viticultural techniques to highlight the natural beauty of the territory to its fullest. Great attention has also been given to selecting young vines sourced from the best European nurseries, with the goal of producing premium wines with a distinct and defined character.

Borgo dei Posseri

The production focus is on enhancing the environmental diversity (morphology, exposure, soil composition, origin, and characteristics) through a vineyard-environment synergy that results in wines with distinct personality and originality. In this context, the vineyards are trained using Guyot pruning, and the following grape varieties are cultivated: Müller Thurgau, Pinot Nero, Sauvignon, Gewürztraminer, Chardonnay, Merlot, and other experimental varieties. The climatic conditions of the site allow the grape varieties to express levels of finesse and persistence of the highest value.

Trentino Alto Adige

Trentino Alto Adige is a region entirely mountainous and divided into the autonomous provinces of Trento and Bolzano, whose border marks a linguistic and administrative watershed.

The attention of wineries and heroic viticulture ensures a consistently high quality level of wines, and particularly the best results are achieved with grapes that thrive in cold climates, such as Sauvignon and Pinot Noir, which here express their varietal characteristics at their best. In addition to the many international varieties, the region also boasts an interesting heritage of native grapes, including Teroldego, Schiava, and Lagrein.

Although it would be difficult to draw a morphological boundary between the two areas geographically, ethnic and linguistic differences on one hand and pedoclimatic differences on the other have also led, over the centuries, to a provincial characterization of wine production.

Both areas, however, share an excellent wine production, thanks also to the geographic position and favorable climatic conditions along the Adige Valley and on the slopes of the mountains that line it, as well as in the flat and hilly areas around Trento and Bolzano.

The Trento area, in addition to its Trento DOC sparkling wines, is famous for its elegant white wines, typical of grape cultivation in high-altitude terrain.

This territory is distinguished by elegant wines that express a unique concept of territoriality. The success and peculiarity of Trento DOC sparkling wine are due precisely to the characteristics of the territory: the combination of climate, different altitudes, terrain, and Trentino know-how make it not just a simple sparkling wine, but a highly esteemed mountain sparkling wine, increasingly recognized and awarded.

Despite its small size, the Trentino region is covered with 10,000 hectares of vineyards, with a percentage of grapes destined for sparkling wine production accounting for 8% and an annual production of 7 million bottles.

The vineyards benefit from different climates: from a mountain microclimate to the milder one of Lake Garda. Factors such as vineyard altitude and temperature variation play an important role in grape ripening, influencing the organoleptic characteristics of the wines.

The varieties cultivated for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The area of organic vineyards in Trentino is steadily increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards product healthiness.
