👁 straw yellow with greenish reflections, fine and persistent perlage; in the mouth it is dry, fresh and well structured, with a nice effervescence

👃🏻 on the nose, it expresses itself with elegant fruity scents, of apple and white peach above all, with notes of yeast and bread crust in the background;

👄 in the mouth it is dry, full-bodied, fresh and elegant.

FOOD PAIRINGS

A very versatile Trento DOC, expressing a unique fragrance. Therefore it prefers fresh but characterful dishes. Excellent as a refined aperitif, it goes very well with fish and shellfish starters, seafood or fish-based first courses. We recommend it with citrus-flavoured salmon tartare.

WINE-MAKING AND REFINEMENT

100% Chardonnay grapes, harvested in the area to the north-east of the estate centre on cool, well-drained limestone soils. Vinified using the Classic Method, and aged on the lees for 24 months in the bottle.

ORIGIN

TERROIR

We are in the Trento DOC territory, home of renowned bubbles, which is distinguished by elegant wines that express a unique concept of territoriality. The success and uniqueness of Trento DOC sparkling wine is due precisely to the characteristics of the territory: the combination of climate, different altitudes, soils and Trentino savoir faire make Trento DOC not just a simple sparkling wine, but a highly prized mountain sparkling wine that is increasingly recognised and rewarded.

The Trentino territory, although small, is covered by 10,000 hectares of vines with a percentage of grapes destined for sparkling wine production of 8% and a total production of 7 million bottles per year. The vines enjoy different climates, ranging from a mountain microclimate to the milder climate of Lake Garda. Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties cultivated for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The area of organic vineyards in Trentino is constantly increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards the wholesomeness of their products.

WINERY

Armando Simoncelli, owner of the Simoncelli winery is a FIVI winemaker, who has been vinifying grapes from his own vineyards and bottling with his name on the label since 1977.

The company is based in Navesel, an ancient port on the Adige River, just southwest of Rovereto, in Vallagarina. With the reclamation of the valley floor and the embankment of the river, this has remained a fertile countryside where the vineyards have found the ideal environment to produce grapes of great value. They cultivate the indigenous varieties of the area and the international ones that have made themselves at home here and produce, among the reds, Cabernet franc, Lagrein, Marzemino, Merlot, Navesel and Schiava gentile; among the whites, Chardonnay, Pinot Bianco and Pinot Grigio, as well as the renowned Trento DOC.

The Simoncelli family began cultivating these vineyards over two hundred years ago and in the farmhouse that stands in the middle of the vineyard - renovated and extended in 1985 - the Simoncellis vinify and refine their wines.
