NOTES FROM OUR SOMMELIERS

👁 Of a beautiful golden yellow, bright and lively, fine perlage;

👃🏻 the nose is fine and complex, with aromas ranging from fresh fruit to ripe yellow fruit (typical of Chardonnay), up to hazelnut, with rich notes of toasted bread and delicate spices on the bottom (due to Pinot Noir);

👄 in the mouth it is creamy, full and soft. The ending was very pleasant.


RECOMMENDED COMBINATION

A savory and complex sparkling wine, with intense aromas, which requires matching with equally characterful dishes and can go well with dishes that are also slightly fatty and oily. To be tried especially with fish, even if a glass should be enjoyed alone.

REFINEMENT

Chardonnay and Pinot Noir grown with Trentino pergolas, harvested with a selection of the best bunches. White vinification, separate for the two varieties. Assembly of the cuvée at the end of fermentation. Aging for 8/10 months in Austrian oak barrels, second fermentation in the bottle (according to the Classic Method) and permanence on the yeasts for over 100 months.

TERRITORY OF ORIGIN

TERROR

The Trento area is unique for the cultivation of vines.

Under the layer of topsoil we find a soil composed of compact moraine silty-clay sand rich in scattered gravelly and pebbly elements. Inside, the area is characterized by plots with different morphological, location and microclimate characteristics.

The morphology of the landscape alternates areas with more evident slopes, covered by woods, with flatter surfaces, partly arranged in terraces, often supported by dry stone walls on the downstream side.

A mild continental alpine climate with the Dolomites shielding the region from the cold northern winds and Lake Garda with its mitigating influence.
The strong temperature variations between day and night, an average temperature of 18° C during the growing season, and the presence of frequent rainfall are the ideal ingredients for harvesting quality, perfectly ripe grapes.

We are in the Trento DOC area, home of renowned bubbles , which stands out for elegant wines that express a unique concept of territoriality. The success and particularity of Trento DOC sparkling wine is due precisely to the characteristics of the territory: the combination of climate, different altitudes, soils and Trentino savoir faire make Trento DOC not a simple sparkling wine, but a highly prized mountain sparkling wine, increasingly recognized and awarded. The Trentino area, although small, is covered by 10,000 hectares of vines with a percentage of grapes destined for the production of sparkling wine of 8% and a total production of 7 million bottles per year. The vines can enjoy different climates: we go from a mountain microclimate to the milder one of Garda. Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The surface area of ​​organic vineyards in Trentino is constantly increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards the healthiness of their products.

The area is also famous for its elegant white wines, typical of the cultivation of grapes in high altitude lands .

In an area largely occupied by mountains, the vineyards are located at an altitude between 200 and 900 meters above sea level, in an environment with climates characterized by strong daily temperature variations capable of giving the grapes aromatic complexity , elegance and freshness . Furthermore, the drainage and aeration conditions of the Trentino soil give the wine a surplus of gustatory complexity.

CELLAR

The Mas dei Chini winery is a small and well-kept winemaking company, on the hills north-west of Trento.

The story is that of the Chini family since 1906, in Segno, a small town in the Val di Non. Initially farmers and then winemakers, the members of the Chini family have always stood out for their spirit of initiative and cutting-edge ideas .

The nerve center of the company is the nineteenth-century Maso which stands on the Nassi di Cadino hill in Trento, dominating it with its vineyards planted with Pinot Noir, Chardonnay, Manzoni Bianco and Gewürztraminer. The grapes vinified by the Chinis come from this farm and here, in the depths of the hill, they refine and rest their prized Trento DOC.

Graziano, the current owner, proudly remembers that the first tractor to plow the land in the Val di Non was that of his grandfather Gloriano.
