RECOMMENDED COMBINATION
This Classic Method is fresh and very balanced, decidedly versatile, and also pairs well with dishes with a certain structure. Perfect with sea fish and soups, we recommend it with raw salmon, pasta with trout or spaghetti with sea urchins.
REFINEMENT
Manual harvest. After mashing, the must begins to ferment and then slowly carries out the second fermentation, aimed at reducing the natural acidity. In August the wine thus obtained is bottled together with a fine cuvé of yeasts and sugars, to carry out refermentation in the bottle and obtain the classic foam. Refines 40 months in bottle; top up with shipping liquor.

TERRITORY OF ORIGIN
TERROR
The Trento area is unique for the cultivation of vines.
Under the layer of topsoil we find a soil composed of compact moraine silty-clay sand rich in scattered gravelly and pebbly elements. Inside, the area is characterized by plots with different morphological, location and microclimate characteristics.
The morphology of the landscape alternates areas with more evident slopes, covered by woods, with flatter surfaces, partly arranged in terraces, often supported by dry stone walls on the downstream side.
A mild continental alpine climate with the Dolomites shielding the region from the cold northern winds and Lake Garda with its mitigating influence.
The strong temperature variations between day and night, an average temperature of 18° C during the growing season, and the presence of frequent rainfall are the ideal ingredients for harvesting quality, perfectly ripe grapes.
The Trento area, as well as for its Trento DOC bubbles, is famous for its elegant white wines, typical of the cultivation of grapes in high altitude lands .
In an area largely occupied by mountains, the vineyards are located at an altitude between 200 and 900 meters above sea level, in an environment with climates characterized by strong daily temperature variations capable of giving the grapes aromatic complexity , elegance and freshness . Furthermore, the drainage and aeration conditions of the Trentino soil give the wine a surplus of gustatory complexity.
CELLAR
South Tyrol, 8 December 1882: Roberto Zeni opens a tavern near the bridge over the Adige and for the occasion uncorks a Teroldego obtained from the first harvest of some vineyards in the "Pini" area. Campo Rotaliano, land of Teroldego, made its way in this period, with the hydraulic reclamation of the Adige river and the Noce stream which led to the creation of ideal land for the cultivation of vines. The Pini vineyard also expanded with the reclamation, and over the years grandfather Roberto also purchased the Pinotti, Zaraosti, Broili and Sortì vineyards. This is the beginning of the story, while the current structure dates back to the mid-seventies, when the brothers Roberto and Andrea Zeni founded the Zeni agricultural company and the distillery of the same name. In both realities, excellence and niche production are sacred words, in the vineyard and in the cellar. Approximately 20 hectares of vineyards, for bottles that express an extraordinary and highly suited territory such as that of Trentino Alto Adige. In recent years the greatest effort has been directed on two fronts: the first in the vineyard, in order to achieve correct maturation of the grapes thus allowing a sugary raw material to be brought to the cellar and in the case of red grape varieties with soft tannins and complex; the second front is the processing of the grapes, the drying and the improvement of the management of alcoholic fermentation. Withering is a very widespread technique in the world wine scene but it has never caught on in Trentino, with the exception of the production of Vino Santo Trentino.
