Production and refinement

Produced in San Felice del Molise, from a vineyard located at 470 meters above sea level, under organic farming conditions. Manual harvest in early October with selection of the grapes.

Soft pressing, decantation at 10°C for at least eighteen hours. The clean must then ferments at 16°C for at least 10-15 days. A short maceration with the skins and aging in steel follow.

Claudio Cipressi

Organic certification, meticulous grape selection, traditional and non-invasive processing methods, and respect for the grape's origin. This is Claudio Cipressi.

Originally from Felice del Molise, he is a pioneer of viticulture in this region thanks to his insights from the 1990s. Encouraged by agronomist Michele Tanno to revive Tintilia, an almost-extinct indigenous grape variety, Cipressi planted the first five hectares of vineyard in 1998, a bold choice given the low yield and the necessary investment. The winery was built in 2003, and the first bottlings began a couple of years later. Today, the winery spans 15 hectares, all farmed organically, located at nearly 600 meters of altitude. Cipressi continues to produce his wine with the same dedication and care as at the beginning.

Claudio Cipressi

After nearly 30 years, Claudio Cipressi is proud to have invested in the revival of Tintilia, considered one of the most significant choices in the Italian and, in his view, European wine landscape. Tintilia best represents his land, a landscape largely still unspoiled, providing an ideal context for this grape to express freshness and longevity. The University of Molise has conducted extensive studies on Tintilia, confirming its relevance and potential.

Claudio Cipressi is a fervent supporter of Tintilia, believing that this grape variety authentically reflects the potential of his land and continues to make a significant contribution to the region's wine scene.

The vineyards of Molise cover an area of ​​approximately 5,500 hectares and are mainly located on the small coastal plains, where 66% of the production is concentrated.
Tintilia del Molise is a little-known native grape variety of the region but of great value. Characterized by small clusters of dark grapes, it produces intense and complex red wines. Tintilia del Molise wines are known for their enveloping aromas, intense color, and rich taste with notes of black fruits and spices.

The Molise DOC includes all the wine-growing areas of the municipalities in the provinces of Isernia and Campobasso.
The specifications of the Molise DOC include 34 grape varieties present in almost all the municipalities of the denomination. The most important grapes that contribute to defining the red wines of the Molise DOC are: Montepulciano, Aglianico, Sangiovese, Merlot, and Pinot Nero.
White grape varieties of the region include: Fiano, Malvasia, Greco Bianco, Trebbiano Abruzzese, Falanghina, Sauvignon Blanc, Chardonnay, and Moscato Bianco. Grapes that give rise to Molise Bianco, Rosso (also superiore, riserva, and novello), and rosé wines, as well as white and rosé sparkling wines. For a varietal indication, the grapes must come from at least 85% of the grape variety indicated on the label.

Campobasso

The province of Campobasso is characterized by a hilly landscape and a continental Apennine climate, with the capital located at over 700 meters above sea level. This province is home to four main wine denominations:

Biferno DOC is the only denomination entirely contained within the province of Campobasso. Biferno DOC wines are primarily produced from Montepulciano, Aglianico, and Trebbiano Toscano grapes and include White, Rosé, and Red wines, with the Red available in Riserva and Superiore versions.

Tintilia del Molise DOC is dedicated to the indigenous Tintilia grape, producing Rosé, Red, and Red Riserva wines. Tintilia is known for its significant color and tannin content.

Molise or del Molise DOC includes wines produced from a wide variety of grapes, such as Montepulciano, Aglianico, Cabernet Sauvignon, Sangiovese, Merlot, Pinot Noir, Pinot Grigio, Pinot Blanc, Chardonnay, Falanghina, Fiano, Greco, Malvasia Bianca Lunga, Moscato Bianco, Sauvignon, and Trebbiano Toscano. Types include Red, Red Riserva, Rosé, Novello, and Sparkling wines, as well as single-varietal wines.

Osco or Terra degli Osci IGT is reserved for white, rosé, and red wines produced in the province of Campobasso. This denomination also includes sparkling and passito wines, with specific authorized grape varieties for the province.
