👁 bright straw yellow with fine and persistent perlage;

👃🏻 the nose expresses a fruity bouquet (candied fruit), with balsamic notes. The finish is characterised by an interesting note of bread crust, deriving from the refinement on yeasts;

👄 on the palate, the fragrance of the bubbles and the freshness prevail, making it very pleasant to drink, in addition to the fullness of flavour and complexity;

 

FOOD PAIRINGS

The Tre Pas Dosè expresses a unique fragrance and versatility, making it a perfect match for fresh, light but also more structured dishes. Perfect as an aperitif, in combination with mature cheeses, fish and shellfish. We recommend it with sushi.

 
WINE MAKING AND REFINEMENT

This Trento DOC Dosaggio Zero comes from chardonnay and pinot noir grapes, grown on volcanic soil and harvested by hand.
After careful selection of the bunches of grapes and transport to the winery, they are softly crushed and destemmed.
Alcoholic fermentation is carried out partly in steel and partly in barriques together with malolactic fermentation. Refinement on the lees for 36 months follows.

ORIGIN

TERROIR

We are in the Trento DOC area, home of renowned bubbles, which is distinguished by elegant wines that express a unique concept of territoriality. 

The success and uniqueness of Trento DOC sparkling wine is due precisely to the characteristics of the territory: the combination of climate, different altitudes, soil and Trentino savoir faire make Trento DOC not just a simple sparkling wine, but a highly prized mountain sparkling wine that is increasingly recognised and rewarded.
The Trentino territory, although small, is covered by 10,000 hectares of vines with a percentage of grapes destined for sparkling wine production of 8% and a total production of 7 million bottles per year. 

The vines enjoy different climates: from a mountain microclimate to the milder climate of Lake Garda. Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for Trento DOC sparkling wine are chardonnay and pinot noir. 

The area of organic vineyards in Trentino is constantly increasing, a natural consequence of the attention and responsibility of the sparkling wine producers towards the wholesomeness of their products.


WINERY

The Pelz winery was founded in 1995 by three brothers (Diego, Michele and Franco) with the aim of creating products that would express the uniqueness of the Cembra Valley wine-growing area, a land carved into the rock by their ancestors for the cultivation of vines. The vineyard plots are distributed in a leopard-like pattern on the south-eastern side of the valley. Thanks to this particularity, it is possible to cultivate varieties with different pedoclimatic requirements and obtain the best results. Their wine is a dream come true thanks to the love of the land and the commitment and daily effort of three brothers. After the necessary transition, starting with the 2019 harvest the Pelz Winery has been BIO certified.
