REFINEMENT

Native grapes carefully selected Teroldego wines, very typical of Trentino, coming mainly from the Pasquari Vineyard, 230 meters above sea level, in the heart of the Piana Rotaliana. Traditional red fermentation, with maceration on the skins for 8-10 days; maturation in small oak barriques for 10 months; followed by a further 6 months of bottle refinement.

TERRITORY OF ORIGIN

TERROR

We are in the Trento DOC area, home of renowned bubbles, which stands out for elegant wines that express a unique concept of territoriality. The success and particularity of Trento DOC sparkling wine is due precisely to the characteristics of the territory: the combination of climate, different altitudes, soils and Trentino savoir faire make Trento DOC not a simple sparkling wine, but a highly prized mountain sparkling wine, increasingly recognized and awarded. The Trentino area, although small, is covered by 10,000 hectares of vines with a percentage of grapes destined for the production of sparkling wine equal to 8% and a total production of 7 million bottles per year.

The vines can enjoy different climates: we go from a mountain microclimate to the milder one of Garda. Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for Trento DOC sparkling wine are chardonnay and pinot noir. The surface area of ​​organic vineyards in Trentino is continually increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards the healthiness of their products.

Another territorial excellence is the Teroldego, which gives excellent results only in the Piana Rotaliana: a small patch of plain surrounded by the Dolomites. Perfect conditions exist here: the rocky walls of the mountains protect the vines from the cold winds coming from the North, while accumulating heat which they release onto the vineyards. The breezes that come down from the Val di Non, however, dry the plants, keeping the vegetation healthy.

Of the Piana Rotaliana Mario Soldati writes: “Here are all the Teròldego vineyards. Here, in the ancient towns of Mezzocorona and Mezzolombardo, there are still the old cellars where this sublime wine is made". Wine that has "a characteristic flavour, recognizable among thousands".


CELLAR

The De Vigilis come from a long history of viticulture, their ancestor Ottavio marked the barrels with his initials at the beginning of the 19th century. The business was relaunched by twenty-three-year-old Francesco De Vigili, in 2015, who brought the family brand back to life, with just five hectares and very few bottles.

From the start the ideas are clear: the land is cultivated without synthetic products and chemical herbicides and so in the cellar they try to respect the characteristics of the Trentino native vine par excellence: the Teroldego Rotaliano.

The vineyards are located in two very important areas in the Teroldego Rotaliano area: Pasquari and Entichiari, which can be traced back to the most historical area of ​​which there is evidence since the end of the fifteenth century, the Teroldeghe. They are vineyards located in the best part of Campo Rotaliano, the one where it was located in the old bed of the Noce stream diverted in the nineteenth century.

In the cellar, experimenting is the soul of De Vigili: different containers and capacities, macerations with variable durations, stalk or no stalk... these are just some of the aspects that vary every year to produce the best wines, always products of the vintage and expression of their idea of ​​Dolomite wine.
