WINE-MAKING AND REFINEMENT

Autochthonous grapes, very typical of Trentino (grown at 300 meters above sea level on the typical Trentino pergola on silty alluvial soil) fermented in red, in contact with the skins, malolactic fermentation and ageing first in stainless steel tanks, then in the bottle for few months.

ORIGIN

TERROIR

We are in the Trento DOC area, home to renowned bubbles, which stands out for elegant wines that express a unique concept of territoriality. The success and uniqueness of the Trento DOC sparkling wine is due precisely to the characteristics of the territory: the combination of climate, different altitudes, soils and Trentino savoir faire make Trento DOC not just a simple sparkling wine, but a highly prized mountain sparkling wine, increasingly recognized and awarded. The Trentino area, although small, is covered by 10,000 hectares of vines with a percentage of grapes destined for the production of sparkling wine equal to 8% and a total production of 7 million bottles a year.


The vines can enjoy different climates: we pass from a mountain microclimate to the milder one of Garda. Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for the Trento DOC sparkling wine are chardonnay and pinot noir. The area of organic vineyards in Trentino is constantly increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards the wholesomeness of the products.

Another territorial excellence is Teroldego, which gives excellent results only in the Piana Rotaliana: a handkerchief of plain surrounded by the Dolomites. Here perfect conditions are created: the rocky walls of the mountains protect the vines from the cold winds coming from the north, while they accumulate heat which they release on the vineyards. The breezes that descend from the Val di Non, on the other hand, dry the plants, keeping the vegetation healthy.

Della Piana Rotaliana Mario Soldati writes: “Here are all the Teròldego vineyards. Here, in the ancient inhabited centers of Mezzocorona and Mezzolombardo, there are still the old cellars where this sublime wine is made". Wine that has “a characteristic flavor, recognizable among thousands”.


WINERY

The history of the Monfort winery begins in 1945 in Palù di Giovo, in the Cembra Valley. In 1951, the business was transferred to the new headquarters in Lavis and in the mid-1960s, with the purchase of the Palazzo Monfort cellars, the company expanded significantly. Today, under the name of "Cantine Monfort", various product lines come to life: "Casata Monfort", Trento DOC and "Terre del Föhn": all wines based on the enhancement of the territory and its potential. The winery's activity has always been aimed at respecting traditions and seeking quality, with the aim of giving life to a project to enhance the native vines: even the lesser known ones, such as San Lorenzo, wanderbara, veltliner and vernaza.
