👁 a beautiful ruby-red yellow with violet hues;

👃🏻 the nose expresses a broad fruity (plum, blackberry, blueberry) and floral (violet) bouquet

👄 on the palate it is soft, with an excellent taste-olfactory balance and decidedly persistent.

FOOD PAIRINGS

Stefanago Rosso is a very versatile and persistent wine. It goes very well with first and second courses with an important bitterish tendency and aromatic intensity. We recommend it with blue cheeses, sliced meats and cold cuts (Varzi salami), vegetable risotto and grilled red meat.

WINE-MAKING AND REFINEMENT

Grapes harvested by hand from the first days of October, with careful selection of the bunches. They are harvested in the order of ripeness, first the merlot, then the rare grapes and finally the croatina. Crushing is done by destemming and contact with the skins for a few days. Each must is added to the previous one and together they ferment. Maturation and ageing take place in steel tanks, with racking and bottling in spring.

ORIGIN

TERROIR

The company is located in Oltrepò Pavese, in the municipality of Borgo Priolo. This is an area with a vocation par excellence for grape and wine production: in fact, its viticultural history goes back at least 2000 years. The vine-growing area of over 13,000 hectares, out of a regional total of 24,000, represents about 55% of the area under vine in Lombardy. The territory is hilly with steep slopes rising up to 1,700 metres above sea level in the first Apennines and more rounded ridges in the eastern area towards Piacenza. The Oltrepò hills offer a very attractive landscape continuum and represent the third largest Italian area for surface area covered almost entirely with vines and with production predominantly with denomination. The variety of the territory, the proximity of the sea and the presence of rivers and streams that influence the climate, mild and temperate, with excellent excursions, determine a unique terroir.

WINERY

The brothers Antonio and Giacomo manage 22 hectares of vineyard, at the centre of which stands the castle, witness to a millennial history. They chose organic farming when it was not yet so widespread. For them, the vineyard is a true independent ecosystem: it is observed and cared for in order to adapt each intervention to the needs, without ever losing sight of the health of the plants and the vitality of the soil. It is a holistic approach, which demands attention to many details and unconditional respect for nature. Antonio and Giacomo cultivate barbera, pinot noir, croatina, pinot grigio, cabernet sauvignon and riesling renano: there is no shortage of grapes, no shortage of knowledge either.
