NOTES BY OUR SOMMELIERS

👁 brilliant straw yellow, with golden reflections; creamy bubbles, fine and persistent perlage;

👃🏻 the nose expresses an intense mineral bouquet with elegant notes of hawthorn, hazelnut and white fruits, with hints of bread crust;

👄 on the palate it is fresh, soft and elegant, with distinct minerality and sapidity. The finish offers the richness of a ripe apricot. Refreshing and very pleasant sip.

FOOD PAIRINGS

Perfect as an aperitif but also to be enjoyed throughout a meal. Try with seafood and shellfish.


WINE-MAKING AND REFINEMENT

This Metodo Classico comes from vineyards around the municipality of Santadi, grown on sandy and clayey soils. Obtained from native white grapes, fermented at a controlled temperature in stainless steel for a week; followed by 7 months of refinement on fine lees, followed by bottling, with selected yeasts, for 40 days; further refinement in glass.

ORIGIN

TERROIR

We are in Sulcis, in the cradle of Carignano, a territory that gives unmistakable emotions. The region lies between the last mountainous offshoots of south-western Sardinia and the sea. It was probably the Phoenicians, founders of ancient Solci on the island of Sant'Antioco, who introduced the Carignano vine to Sardinia.
The cultivation area of the vine is about 1,700 hectares, but despite its limited diffusion, Carignano can be considered with certainty one of the most important wines of Sardinian oenology. Carignano's resistance to the salty winds from the sea has allowed its cultivation to develop mainly on the sandy, hot and sunny soils of Sulcis, which, also thanks to the low yields, give the wine vigour and richness in extracts and aromas. From the perfect balance between climate, soil and this elegant vine comes a wine with an intense ruby-garnet colour, warm and enveloping aromas of plums and morello cherries, sweet spices and chocolate, liquorice and black pepper.
On the palate it is aristocratic and balanced with soft tannins of rare elegance. Recognised in 1977 as a Controlled Designation of Origin wine, it is marketed under the name Carignano del Sulcis.


WINERY

The Santadi winery is one of Sardinia's most famous producers, the creator of an important work of oenological enhancement of the Sulcis territory, a splendid south-western area of the island. It is one of the most authoritative and virtuous social wine cellars in the whole of Italy, founded in 1960 and today comprising more than 200 winegrowing members. The objective of the Santadi winery has always been ambitious: to enhance the value of Carignano del Sulcis, taking it to previously unthinkable heights of quality. Today, Santadi can undoubtedly claim to have accomplished this mission. In fact, Carignano has carved out a leading role for itself in the Italian wine scene, thanks to its elegant red wines of great value.
