👁 Of a beautiful straw yellow;
👃🏻 the nose is exuberant and intense, and is expressed with aromas of ripe fruit, honey and flint that recalls the volcanic origin of the soil;
👄 on the palate it is sapid and mineral, rich, enveloping, a white of great complexity.

A Soave of great character, which requires dishes of equal intensity. Try it with elaborately prepared fish, white meats, savory cured meats and medium-aged cheeses.

WINE-MAKING AND REFINEMENT

This single vineyard Soave Classico Cru is born on soils rich in black basaltic rocks, of volcanic origin, locally called "sengio", from which Sengialta. Only the best bunches are selected from this plot and the wine obtained is aged for 22 months on the fine lees in 20 hectoliter barrels. It matures in the bottle for another two years, thanks to the enormous evolutionary potential of the garganega, the local native par excellence.

ORIGIN

TERROIR

The Balestri Valda vineyards are located within a large volcano-tectonic basin delimited to the west by the Castelvero line and to the east by the Schio-Vicenza line. There is a profound relationship between soils composed of basalts and the gustatory richness found in the glass. Basalts are volcanic rocks formed by successive cycles of eruptions, protracted for three geological cycles in an underwater environment. The eruptions have given rise to volcaniclastic products of different colors from grey, to yellow, to red, in relation to the formation environment and the degree of oxidation. The action of exogenous agents then shaped the landscape, giving rise to the beauty of the area we see today.

Basalts poor in silicon and rich in magnesium and iron tend to absorb between 85% and 99% of the phosphates added to these rocks, which have strong drainage capacities.

But in the soils of Balestri Valda there is not only basalt: the black stone mixes with the white limestone, creating a mixture of minerals from which the vineyard draws great benefits. Limestones are what remains of ancient submarine beds; these sediments rich in calcium carbonate, settling on the bottom of the sea, trapped animals and shells that today we can still recognize in fossils of the most curious and varied shapes.

WINERY

In the heart of Soave Classico, the history of the Balestri Valda winery begins with Guido Rizzotto. But since he was 22 to today, it is his very young daughter Laura Rizzotto who has carried Balestri Valda forward with personality, extreme love for the environment and always new ideas. Following the principles of organic farming, they produce 8 wines, have a beautiful cellar - independent from an energy point of view -, an orchard with ancient endangered varieties and bees, Laura's real obsession. His goal, in the vineyard and in the cellar, is to demonstrate that it is possible to be sustainable and produce wines of the highest quality without giving up the wholesomeness of the products and the beauty of the landscape, in a balance between man and nature that you breathe when visiting the estate.
