👃🏻 on the nose it expresses a perfume with a very complex aromatic framework, highlighting the spicy notes of elderberry and sage;

👄 on the palate it is tasty and rich, with varietal notes supported by consistency, body and minerality.

RECOMMENDED COMBINATION

This Sauvignon is fresh, tasty and full-bodied. It goes well with fish or shellfish-based preparations, even in quite complex preparations. Try it with sea bream with juniper.


REFINEMENT

From the Tegge vineyard, Prà Grande, of less than one hectare of surface area located at an altitude of approximately 400/500 meters above sea level and facing west, south, west. From a calcareous and clayey soil, manual harvest of the grapes in boxes with selection in the vineyard, at the end of September. Destemming and soft pressing, maturation in thermo-conditioned stainless steel with rest on its yeasts until a few weeks before bottling which takes place between April and May.

TERRITORY OF ORIGIN

TERROR

The Trento area, as well as for its Trento DOC bubbles, is famous for its elegant white wines, typical of high altitude territories. Here altitude plays a fundamental role in the quality of the wine in the glass. The vineyards are located at an altitude between 200 and 900 meters above sea level, in an environment with climates characterized by strong daily temperature variations capable of giving the grapes aromatic complexity, elegance and freshness. In addition, the conditions of drainage And ventilation of the Trentino soil give the wine greater gustatory complexity .

The vines enjoy different climates: they go from a mountain microclimate to the milder one of Garda. Factors such as the altitude of the vineyard and the temperature range play an important role in the ripening of the grapes, influencing the organoleptic characteristics of the wines. The varieties grown for Trento DOC sparkling wine are chardonnay and pinot noir. The surface area of ​​organic vineyards in Trentino is continually increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards the healthiness of their products.


CELLAR

Graziano Fontana is a winemaker authentic, who spends all his time working in the vineyard of just 4 hectares. In 1989 he chose to become an Independent Winemaker and therefore to stop delivering the grapes to the social wineries. It all started from a form of protest because the grapes from his country were paid little. From there, a story of quality and authentic wines begins.

Graziano believes in the philosophy of the FIVI winemaker, he loves his vineyards, protects them, harvests the fruits and bottles them with extreme care. All his wines are characterized by the fact that they improve a lot over time.
