Sauvignon expresses very lively and elegant fruity notes, which is why it accompanies refined fish dishes, local or from an international tradition. An excellent white wine to accompany delicious seafood based dishes, such as king prawns and swordfish; also perfect with sushi and sashimi.

 
WINE-MAKING AND REFINEMENT

The Sauvignon Colli Orientali DOC is the result of a late harvest: the grapes are harvested by hand and brought to the cellar, here they are de-stemmed and crushed. The wine ferments in oak barrels for at least 10 months.
The grapes come from a vineyard over 25 years old, where no form of irrigation is implemented.

ORIGIN

TERROIR

The company is located in Friuli Venezia Giulia, in Abana di Prepotto where viticulture is truly at home. The municipality is located on the hills south-east of Cividale, close to the border with Slovenia. Native vines are grown such as Schioppettino and Ribolla gialla. The area is that of the Colli Orientali del Friuli. These are reliefs at an altitude between 100 and 350 meters above sea level, homogeneous both for climatic conditions and for the geological origin. Millions of years ago the Friuli plain was invaded by the sea and the coasts were almost close to the current Julian Prealps. On the bottom of this archaic lagoon, over the millennia, a slow sedimentation process takes place which gives rise to imposing formations which, with the retreat of the sea, have emerged from the waters. These deposits of Eocene origin appear today as an alternation of layers of marl (calcareous clays) and sandstone (calcified sands) with a very typical appearance. These are terrains that are extraordinarily suited to viticulture due to their position and composition. 

WINERY

Grillo Iole is a winery in Friuli Venezia Giulia, located in Abana di Prepotto, a small town in the province of Udine, a town immersed in the green of the Colli Orientali del Friuli, on the border with Slovenia. The winery was founded at the behest of Sergio who, in the 70s, bought the first plot of land and cultivated it as a vineyard; the vineyards are located in the surroundings of an ancient seventeenth-century manor house, with a nearby church dedicated to Santa Giustina. The cellar was renovated in 2003, bringing to light the stone walls of the ancient residence; on that occasion it was equipped with the barrel room for ageing. Grillo Iole cultivates and produces grapes from just 9 hectares of its own vineyards.
It grown especially native vines, such as Friulano, Ribolla Gialla, Verduzzo Friulano and Picolit among the whites, while for the red grapes Refosco dal peduncolo rosso and Schioppettino di Prepotto are the masters, as well as some international varieties that have become typical in the area such as Merlot, Cabernet sauvignon and Sauvignon blanc.
