WINE-MAKING AND REFINEMENT

Grapes from south, south-east facing soils of a metalliferous clay and chalk type, rich in microelements. Vineyards at 325 metres above sea level. Harvest in the first half of September, vinification in stainless steel for 10 days at controlled temperature. 30% of the total goes into new barriques for 3 months, followed by blending and further ageing of the entire mass in steel for a further 3 months. Malolactic fermentation and maturation in bottle.

ORIGIN

TERROIR

Tuscany is unique for grape cultivation. Its history is centuries old, a land civilised since Etruscan times.

The estate is located in the hilly area of Montebamboli, in the municipality of Massa Marittima, in an evocative territory between the coasts of the Tuscan Maremma and the heights of the Metalliferous Hills. These lands, located between Grosseto and Siena, have been known since Etruscan times for the presence of minerals such as iron, copper, lead, zinc and gypsum deposits. The constant presence of sea breezes, combined with the scarcity of spring rainfall, cradle the perfect ripening of the grapes, giving our wines an unmistakable quality note.

The 'capitals' of Chianti, on the other hand, are the cities of Florence and Siena, and its lands straddle the two provinces: 70,000 hectares that comprise the entire municipalities of Castellina in Chianti, Gaiole in Chianti, Greve in Chianti, Radda in Chianti and in part those of Barberino Tavarnelle, Castelnuovo Berardenga, Poggibonsi and San Casciano in Val di Pesa. The vineyards face south and west at 360-530 metres above sea level. The soil consists of marly limestone, schist marl, clay schist and, subordinately, sandstone. The skeleton is essentially composed of alberese and galestro, ideal for sangiovese, and sandstone and clay in some individual vineyards such as Casi. Sangiovese, the region's main grape variety, is a great interpreter of the unique characteristics of the Black Rooster land.

WINERY

In 2001, Luca Purgatorio decided to start the company, identifying the ideal place to plant the vines and raise high quality vines: he found it in the heart of the Tuscan Maremma, at the end of a winding road surrounded by dense woods.
40 hectares of land in the wild with a view of the Gulf of Follonica, rugged and barren become a select vineyard.
After twenty years, the winery is a niche reality that has focused heavily on quality, in the vineyard and in the cellar. The recipe lies in the excellence of its wines and the passion and expertise of the people who run it.
