👁 a beautiful straw yellow;

👃🏻 on the nose it is inviting, rich and characteristic, with intriguing notes of grapefruit, green apple, candied lemon and beeswax;

👄 in the mouth it is well balanced, it shows a mineral touch, with a delicate and very pleasant freshness. Surprising expression of the Mâcon territory.


RECOMMENDED COMBINATION

An important and very elegant Chardonnay from Burgundy, fresh and fragrant, perfect to pair with scallops, oysters and seafood, but also with fresh pasta with light and equally aromatic sauces. Also perfect as an aperitif, for special occasions.


REFINEMENT

Pure Chardonnay, grown on calcareous clay soils, harvested by hand.

Vinification done with great care: 70% in steel in oak barrels, 30% in stainless steel for 12 months, maturation for 8 months in stainless steel vats on the fine lees. Malolactic fermentation carried out.

TERRITORY OF ORIGIN:

TERROR

We are in one of the most suitable areas in the world : Burgundy.

A unique and evocative territory, capable of producing extraordinary wines. The soil and climate conditions of Burgundy, combined with the special savoir-faire of the vignerons, due to centuries of quality agronomic practices, determine a unique terroir. The care and specificities in this region lead to the definition of climat, protected by UNESCO.
The Burgundy vineyards stretch for approximately 250 km between Chablis to the north and Mâconnais to the south, bordering the Rhône valley. The climate is predominantly continental, with light maritime influences in the western area up to Dijon and Mediterranean in the southernmost area. Winters are cold, frosts are quite frequent, sometimes even in spring; rainfall is minimal during the budding period but intense between May and June, and this can compromise flowering and therefore the harvest. The soil of Burgundy is made up of marine sedimentations mixed with limestone, marl and clay.

The territory is divided into these large sub-regions: the Auxerrois, the Chablis to the north in the Yonne, then the Côte-d'Or, the Chalonnais and the Mâconnais and the Beaujolais. In Chablis and Auxerrois, calcareous-marly soils prevail, in the Côte d'Or the soil richer in limestone allows Pinot Noir to express all its class, while in the southern area clay and marl give great elegance to Chardonnay. In Chalonnais and Chalonnais limestone, marl and clay reign, while in Beaujolais the soil is calcareous, shale and clay.


CELLAR

In 2015 three brothers Mathieu, Camille and Jean-Baptiste Paquet took over their parents' company, which they transformed to make it an absolute quality company in the Mâconnais (with vineyards Solutré-Pouilly e Mâcon).

The first step was the adoption of organic agriculture, currently in biodynamic conversion.

The entire production process has been restructured in the sense of quality. Pruning has been revised to have smaller and fewer bunches, for wines capable of expressing the nuances of the terroir. Each vine is cared for by hand and accompanied in its development without forcing: during the summer, the shoots are not pruned but delicately intertwined and the vines regulate the number of leaves and the size of the berries on their own; the right maturity is determined for each micro-plot; the harvest is manual.

In the cellar no pumping but exploitation of the force of gravity, soft pressing, only indigenous yeasts.
