👁 straw yellow in colour;

👃🏻  on the nose it expresses intense hints of ripe fruit;

👄  A white wine surprising for its intensity, on the palate it recalls the structure of reds, mitigated by a soft taste and freshness.


RECOMMENDED COMBINATION

If there is a versatile wine that goes well with many dishes, it is Sabbione. Try it as an aperitif and bring it to the main courses, especially the first courses and the intense and tasty but not too structured second courses.


REFINEMENT

Pecorino grapes harvested with care, when fully ripe, when they have reached a good level of ripeness and structure. Fermentation in steel at low temperature, aging for 12 months in steel in its own fine lees before bottling.

TERRITORY OF ORIGIN

TERROR

We are in the province of Ascoli Piceno, a land of rare beauty, where the vine has found a fertile home and speaks a plural language: the varieties indigenous  white berry like trebbiano , la little pussy  and the found pecorino cheese  coexist with the delicate rusticity of red Sangiovese and the vigorous strength of black Montepulciano.

From the blend of the former comes the Falerio and the latter the Rosso Piceno Superiore, both wines with a strong territorial vocation which today coexist with the Offida DOCG and the interesting single-variety interpretations.

The territory is characterized by an early conversion into organic  of most of the land dedicated to vineyards and beyond, with agricultural work deeply oriented towards respect for nature: all this determines the quality of the wines of the Piceno hills. Here the climate is continental, characterized by cold winters and hot summers; the lands clayey  express their maximum potential.


CELLAR

The Polini family has ancient origins: its coat of arms has been present in Carassai since the eighteenth century and it still produces its wines in the old renovated farmhouse.

We are in Val Menocchia, in the province of Ascoli Piceno, between the Adriatic Sea and the Sibillini Mountains.

The grapes of Tenuta Polini are cultivated with great care and the wines refined with a natural approach, to give life to bottles of character, which reflect the strong passion of this small estate.
