NOTES BY OUS SOMMELIERS

👁 a beautiful pale pink with fine and persistent perlage;

👃🏻 on the nose it expresses sensations of berries, gooseberries, violets and mandarin, with hints of menthol and toasted hazelnut;

👄 on the palate the yeasts and freshness create a dynamic drink. The finish has a wild strawberry and raspberry return, closing on a savory and almondy end.

 

FOOD PAIRINGS

Brut Rosé is a wine with an excellent fragrance and softness, capable of pairing with fresh and light dishes. Excellent as an aperitif, or paired with a grilled tuna steak.

 
WINE-MAKING AND REFINEMENT

An intriguing bubble composed of Chardonnay and Garganega grapes harvested by hand in boxes in mid-October. Soft pressing, fermentation in steel at about 20° C for 12-15 days. The second fermentation takes place according to the Classic Method rules, in the bottle. Followed by refinement on the lees for 24 months, it rests in steel and for a further refinement in the bottle before been marketed.

ORIGIN

TERROIR

We are in the Berici Hills, in the province of Vicenza, where man has always cultivated vines and olive trees. The position and conformation of the land have favoured the construction of marvellous rural architecture set among the hills, such as water mills, castles and hermitages, many of which are still visible today. In addition, there is a vast heritage of Venetian villas, which reaches its highest expression in the architecture of Andrea Palladio. These hills also conceal a splendid lake, the Fimòn, where ancient pile dwellings have been found. The earliest presence of vineyards dates back to the same age, as evidenced by the numerous remains of grape seeds found. Here, the calcareous rock, the red clay and basaltic soils of volcanic origin, the altitude that keeps the fog away and the low annual rainfall create an optimal environment suited to viticulture. The grape varieties cultivated here are Tai, Carmenère, Garganega, Chardonnay and other international varieties.

WINERY

We are in the Berici Hills, in the village of Alonte in the province of Vicenza, in the green of dense spontaneous oak and beech woods. The roots of the vines dig deep into the stony earth, finding nourishment in what, 50 million years ago, was the bottom of a sea. Today, the soil gives its fruit intense and pleasant flavour and minerality. The 30 hectares of vineyards are 150 metres above sea level and enjoy a warm, dry microclimate. Starting with grandparents Bruno and Giuditta, who fell in love with these mountains and planted the first vines "among the stones", the passion for wine has involved the whole family, who for 20 years have specialised in the production of Metodo Classico sparkling wines, from Chardonnay and Garganega: the first in the Berici Hills. The cuvées of their sparkling wines, all vintage, are the result of a skilful blend. No synthetic chemical products are used: the work in the vineyard is meticulous. In the cellar dug into the rock, the bottles are then stacked by hand for the second fermentation and refinement on the lees for at least 36 months, up to 70.
