Production and refinement

Pinot Meunier 30%, Pinot Noir 30%, Chardonnay 30%, hand-harvested (plus 10% of red wine from Pinot Meunier produced in the Champagne appellation).

Fermentation in stainless steel at a controlled temperature with natural yeasts. Alcoholic fermentation at 20-22°C for 30 days, followed by filtration. Second fermentation in the bottle using the Méthode Champenoise, with aging on the lees for 3 years.

Organoleptic analysis

Visual exam

Clear, bright, and limpid cherry rose color, with fine, continuous, and persistent bubbles.

Olfactory examination

On the nose, it expresses mature fruity notes (strawberry, blackcurrant, raspberry, pink grapefruit, mandarin, pomegranate), along with fresh peppermint that enriches its aromatic profile.

Tasting

On the palate, it explodes with all its power: it is fresh, smooth, and mineral. The finish is very pleasant.

Casters

It is an old cellar in the Marne Valley: back in 1857, Eugène Cadel had the idea of creating his own wine and personally managing the commercialization of the bottles.

We are in the heart of the Champagne region.

Over the years, the control of the cellar passed to Eugène's brother-in-law in 1921, then to his niece Marguerite and her husband Louis Casters in 1944, who established the Louis Casters brand. Later, another generation took over the company before the current one, represented by Johan and his wife Valérie, great-grandchildren of Eugène.

With passion and dedication, they continue to drive the development of the cellar, always maintaining a respect for tradition while adopting modern technologies to ensure the highest quality of their wines.

Founded on solid family values and respect for traditional methods, this small Maison produces precise and elegant wines, with a vineyard area covering 10 hectares.

Champagne

The vineyards of Champagne, stretching 150 km east of Paris, challenge the extreme conditions of the northern climate. Situated at the 49th parallel north, the grapes are cultivated with the help of the ocean's influence, which moderates the temperatures, and the extraordinary skills of the vignerons.

Average temperatures, just above 10°C, promote the slow ripening of the grapes, preserving their natural acidity. Despite the humid climate and frequent spring frosts, the region produces ideal grapes for Champagne, thanks to soils rich in chalk and other mineral components. The vineyards, spread over diverse terrains, extend across hills and plains, capturing the essence of the Mistral wind and the few hours of available sunlight.

Montagne de Reims

In the Montagne de Reims, we find a subsoil of chalk with layers of clay and lignite. Here, Pinot Noir expresses all its power in freshness, releasing scents of extraordinary elegance, with notes of currant and spices. Numerous houses, including Roederer, draw from these soils to create prestigious cuvées and vintage champagnes of great value, maintaining a centuries-old tradition in sparkling wine production.
