Production and refinement

Piedirosso (per’e palummo) and Aglianico cultivated at an altitude of 300–600 meters above sea level. Volcanic and sedimentary soils on steep slopes require heroic viticulture and respectful vineyard management, with spontaneous grassing and organic farming practices.
Manual harvest takes place in October.

Vinification in stainless steel with brief skin maceration.
Aged in steel for several months, with no oak contact, to preserve primary aromas and immediate drinkability. No aggressive fining or heavy filtration: the wine retains its full territorial identity.

Bright, luminous pink, with a rare vibrancy of color.

Olfactory examination

Well-defined fruity and floral notes, with hints of pomegranate, dog rose, crisp cherry, and a finish marked by Mediterranean herbs: thyme, marjoram, and sage.

Slim, fresh, and immediate on the palate. Light-bodied, with a savory and highly enjoyable sip. Good persistence, with a clean, mineral finish that invites another taste.

Cenatiempo

Una viticoltura che rispetta l’anima – marinara e vulcanica – dell’Isola di Ischia. La famiglia Cenatiempo inizia la produzione di vino nel 1945: da allora è cresciuta molto ma rimanendo ancorata fermamente alle proprie tradizioni. La loro è una coltivazione eroica, dove gli autoctoni Biancolella, Forastera e Piedirosso non hanno mai visto attrezzi agricoli.

Cenatiempo

Dove la meccanizzazione non può arrivare, il viticoltore esprime tutta la sua energia e attenzione, curando i sei ettari vitati in regime biologico. “Il nostro vino si fa in collina e sul mare” è il loro slogan: la verità di questo motto si sente nell’identità unica di ogni loro bottiglia.

Campania

Viticulture in Campania has its roots in ancient Greek tradition, when numerous grape varieties now considered native were introduced by the Hellenics. Powdery mildew and phylloxera arrived later than elsewhere, but the damage was enormous, and the path to quality was only taken from the 1980s onwards.
Recently, Campanian wines have seen incredible success thanks to a production characterized by traditional agriculture, with a strong focus on environmental preservation and sustainability. Many of Campania's wineries are family-owned and produce high-quality wines in small quantities.

In general, Campanian viticulture is characterized by a great variety of terroirs and native varieties, which give rise to wines of great quality and personality, each with its own unique characteristics. For many years, the imposing Taurasi DOCG was the only wine to be awarded the DOCG status, but since 2003, Greco di Tufo DOCG and Fiano di Avellino DOC have also been recognized, and since 2011, Aglianico del Taburno has also been honored with this designation. In the rest of the region, there are also 15 DOC and 10 IGT wines.

Ischia

For the Romans, Ischia was a land of great wine, and until the mid-twentieth century, wine was the heart of the island's economy. The viticultural history here is ancient indeed. Effectively, it is a dormant volcano. In 46 square kilometers of total surface area on the island, many vineyards are on slopes that go well beyond 30%, making for heroic viticulture. The technique of terracing with dry stone walls made of handcrafted stones has facilitated the cultivation of rugged areas, which benefit from special microclimates.

The soils are extremely rich in minerals, much loved by the vines. Viticulture is particularly suited due to the dry, mild, and ventilated climate, with very little rainfall: this makes cultivation aimed at producing fresh, flavorful, and drinkable wines. The soils are dark and friable, rich in potassium, which promotes sugar formation during ripening. On the island of Ischia, varieties such as Aglianico, Piedirosso, Guarnaccia, Biancolella, and Forastera are cultivated.

Heroic terraces, on steep slopes, cultivate ancient varieties in a mild and ventilated climate, yielding fresh and flavorful wines enriched by the minerals of volcanic soils.
