FOOD PAIRINGS
This Riesling expresses a unique minerality. It is a wine that can accompany the vast majority of fresh, fish-based dishes.
It is perfect with spicy white fish dishes, fresh goat cheese, crostini and aperitifs in general.
WINE-MAKING AND REFINEMENT
From a south-facing vineyard at an altitude of 830 metres, with quartz-rich, mica-rich, silty gravel and sandy soil.
Grapes grown according to biodynamic principles, at full ripeness; harvested by hand, fermented in oak barrels, aged for one year in large oak casks and one year in steel.

ORIGIN
TERROIR
We are in Alto Adige, an area highly suited for the production of white and red wines. The vineyards in South Tyrol are located at altitudes between 200 and 1000 metres and the vines grow on very different soils. The autochthonous Lagrein variety, for example, prefers warm gravelly or sandy soils, while the local Gewürztraminer grape variety is at its best on clay and very calcareous soils.
Unique are the stony soils of dolomitic limestone, which are especially widespread in the southern offshoots of the Wine Route and originate from the famous Dolomite mountain massif, a UNESCO World Heritage Site. Due to their mineral characteristics, these warm and very permeable soils are especially ideal for producing full-bodied and strong-tasting white wines.
WINERY
In one of the highest altitude wine-growing areas in the whole of South Tyrol, Norbert cultivates 3 hectares mostly with white grape vines and fruit trees. The vineyards grow up to 900 metres above sea level and many of the vines are over 40 years old. It is the shale soil and the excellent sunshine that make viticulture at this prohibitive altitude possible. Biodynamic processing also allows the grapes to reach optimal physiological maturity. The use of biodynamic preparations, careful farming and diligent sowing result in grapes of the highest quality. In the cellar, processing is carried out using only natural ferments.
