Production and refinement

Riesling 100% from approximately 15-year-old vines rooted in marl soil in the Palava Hills (Moravia). Hand-harvested in 25 kg crates. Produced in very limited quantities each year.

Spontaneous fermentation in stainless steel. It ages for one year in large oak barrels and then for an extended period in the bottle, which can last up to three years.

Intense straw-yellow.

Olfactory examination

On the nose, it expresses the typical varietal aromas, with intense floral notes of chamomile and fruity hints of green apple and citrus; the presence of hydrocarbons completes an intense and refined profile.

Tasting

A complex and extremely elegant Riesling: savory, dry, and full-bodied. Its pronounced minerality makes it a unique example of the winemaking potential of Southern Moravia.

Dominika, a passionate oenologist, and her collaborator Ivo meticulously tend to the vineyards situated on the charming highlands of Pavlov, in the picturesque region of South Moravia. Here, amidst breathtaking landscapes and pristine nature, Riesling vines find their ideal habitat.

The climate, although harsh, is softened by the proximity of the lake within the Věstonická nature reserve, creating perfect conditions for viticulture. On a 4-hectare vineyard, Dominika and Ivo work with great passion, blending tradition and innovation to produce wines of exceptional quality and character.

The Czech Republic is experiencing a true enological renaissance, thanks to favorable climatic conditions, a millennia-old winemaking tradition, and new investments that have introduced modern technologies. With viticulture rooted in over two thousand years of history, the country is now renowned for the growing quality of its wines, particularly white wines.

There are two main wine regions in the Czech Republic: Bohemia, with 444 hectares of vineyards and six cru, and Moravia, which represents 95% of the country’s wine production. Moravia, with its 11,300 hectares divided into ten wine zones, is the heartland of Czech viticulture. Here, white wines are the most prized, with varieties such as Chardonnay, Riesling, Müller Thurgau, and Moravian Muscat, along with the prestigious Veltliner Verde. Although red wines are less renowned, they are still noteworthy, produced from grapes like Frankovka, Pinot Noir, Zweigelt, and André.

Despite its limited wine production, which accounts for only 0.24% of the global total, Czech wines are gaining recognition. The country’s 35 white wine varieties and 26 red wine varieties, including some indigenous ones like Pálava, reflect the diversity and richness of its wine heritage.

The Czech wine sector is deeply connected to the country’s history, still bearing traces of the communist era when quality was sacrificed for quantity. However, with the fall of the Iron Curtain in 1989 and entry into the European Union in 2004, Czech viticulture has undergone a revival, with the restoration of family wineries and the emergence of new enterprises.

Today, Czech wine is increasingly appreciated. South Moravia, with its 1,200 km of cycling trails, has become a beloved destination for wine enthusiasts, offering a unique experience that blends tradition with enological innovation.

Moravia

South Moravia, located in the southeastern part of the Czech Republic bordering Slovakia and Austria, is the beating heart of Czech viticulture. This region, which accounts for 95% of the country's wine production, boasts a long winemaking tradition and a favorable climate that supports the cultivation of high-quality grapes.

With its 11,300 hectares of vineyards spread across ten wine zones, South Moravia is particularly renowned for its white wines. Some of the best Chardonnay, Riesling, Müller Thurgau, and Moravian Muscat in the Czech Republic are produced here. The Veltliner Verde, often considered the king of Moravian whites, is especially valued for its quality and distinctive character. Red wines, such as Frankovka and Pinot Noir (locally known as Rulandské modré), also deserve attention, though they are less internationally recognized compared to the whites.

The climate in South Moravia is akin to that of Alsace and Burgundy, featuring cold winters, warm summers, and a shorter growing season compared to Western Europe. This climate, combined with the effects of global warming, is further improving conditions for viticulture, allowing for optimal grape maturation.

South Moravia is not only a prominent wine region but also a highly sought-after tourist destination.
