FOOD PAIRINGS

This Ribolla Gialla expresses intense and complex notes and has a very strong territorial link, which is why it lends itself well to being combined with local dishes of medium persistence and structure, as well as fresh foods. Ideal on raw ham and delicate and not too structured first courses of fish. 

WINE-MAKING AND REFINEMENT

Ribolla Gialla comes from pure grapes of the vine of the same name with vines that rest on the classic Friulian marly-clayey soil. The harvest takes place strictly manually with grapes harvested in late ripening and subjected to a double selection. In the cellar destemming takes place and fermentation is started spontaneously by indigenous yeasts with long contact with the skins, in truncated conical oak vats. It ages in 30 hl Slavonian oak barrels for 12 months in contact with the noble lees. No clarification or filtration before bottling.

ORIGIN

TERROIR

The company is located in Friuli Venezia Giulia, in Prepotto, in Northern Italy. The municipality is located on the hills south-east of Cividale, close to the border with Slovenia. Native vines such as Schioppettino and Ribolla Gialla are grown, in the area known as Colli Orientali del Friuli. These are reliefs at an altitude between 100 and 350 meters above sea level, homogeneous both for climatic conditions and for the geological origin. In ancient times (35-55 million years ago) the Friuli plain was invaded by the sea and the coasts were almost close to the current Julian Pre-Alps. On the bottom of this archaic lagoon, over the millennia, a slow sedimentation process took place which gave rise to imposing formations which, with the retreat of the sea, emerged from the waters. These deposits of Eocene origin appear today as an alternation of layers of marl (calcareous clays) and sandstones (calcified sands) with a very typical appearance. Lands extraordinarily suited to viticulture due to their position and composition.

WINERY

The Ronco Severo winery is a small winery located in Prepotto, in the province of Udine. We are within a region, Friuli Venezia Giulia, which has always been linked to wine and its traditions; over the last few decades it has been able to establish itself for the quality of its products, especially for white wines. 
Ronco Severo is a winery that reflects the spirit of the owner, Stefano Novello. A refined soul, raised within a family of peasants, accustomed to cultivating the land since the postwar period, dedicating himself to agriculture, livestock and to the vineyards.
Ronco Severo produces a very limited production every year and is however able to offer winelovers a wide range of the most representative products of this area. Genuine and direct wines, where compromise is never accepted at the expense for wine with a sincere and clean sip.
