Production and refinement

Rebo 100% from the vineyard adjacent to the village of Santa Massenza, cultivated with certified organic farming practices, using biodynamic preparations and cover crops. The grapes are harvested at full ripeness and partially dried using the typical breeze of the area, known as the Ora del Garda. Harvest takes place in early October.

Fermentation with long maceration on the skins in stainless steel tanks and large wooden barrels at controlled temperature; aging for several months in oak barrels on fine lees.

It has a beautiful intense red color, tending towards garnet.

Olfactory examination

On the nose, it expresses intense and complex aromas, with notes of ripe red fruit and jam.

On the palate, it is warm, juicy, full, and smooth, with a long olfactory persistence on the finish.

In the heart of the Valle dei Laghi, halfway between Trento and Lake Garda, lies Santa Massenza, a village rich in history and winemaking and distillation traditions. Here, the mild southern climate blends with the harsher Alpine one, creating a unique and extraordinary terroir that combines Mediterranean and Alpine influences. It is in this context that the Poli Agricultural and Distillery Company, founded by Francesco and Alessandro Poli, continues a tradition passed down through five generations, preserving the art of viticulture and distillation.

Alessandro Poli, with great dedication and commitment, chose the path of organic farming in the 1990s, ahead of its time. His passion for the land and his innovative vision led him to save historical local grape varieties such as Pavana and Peverella, which were at risk of extinction. Among the most cultivated varieties, Nosiola represents the symbol of the company, a vineyard that tells the soul of Trentino.

Originally founded as a distillery in the early 1980s, Poli stands out for using a bain-marie still, a traditional tool that allows the processing of the best pomace freshly harvested during the harvest. The product range is vast, with numerous expressions of Trentino grappa, celebrating the quality and richness of the region.

Since 1998, the vineyards of the Poli company have been cultivated following the principles of organic farming, using biodynamic techniques that enhance soil fertility and promote the natural balance of the plants. This approach allows for the production of healthy grapes and wines that are a true expression of the terroir, respecting the historical heritage of the area while aiming for a quality that looks to the future.

Today, Alessandro shares his passion with his family, continuing a centuries-old tradition enriched by innovations that respect both history and nature.

With its 7.5 hectares of vineyards, the Poli Agricultural and Distillery Company is a benchmark for organic viticulture and distillation in Trentino, continuing to write a story driven by passion, respect for the land, and uncompromising quality.

Trentino Alto Adige

Trentino Alto Adige is a region entirely mountainous and divided into the autonomous provinces of Trento and Bolzano, whose border marks a linguistic and administrative watershed.

The attention of wineries and heroic viticulture ensures a consistently high quality level of wines, and particularly the best results are achieved with grapes that thrive in cold climates, such as Sauvignon and Pinot Noir, which here express their varietal characteristics at their best. In addition to the many international varieties, the region also boasts an interesting heritage of native grapes, including Teroldego, Schiava, and Lagrein.

Although it would be difficult to draw a morphological boundary between the two areas geographically, ethnic and linguistic differences on one hand and pedoclimatic differences on the other have also led, over the centuries, to a provincial characterization of wine production.

Both areas, however, share an excellent wine production, thanks also to the geographic position and favorable climatic conditions along the Adige Valley and on the slopes of the mountains that line it, as well as in the flat and hilly areas around Trento and Bolzano.

Trento

The Trento area, in addition to its Trento DOC sparkling wines, is famous for its elegant white wines, typical of grape cultivation in high-altitude terrain.

This territory is distinguished by elegant wines that express a unique concept of territoriality. The success and peculiarity of Trento DOC sparkling wine are due precisely to the characteristics of the territory: the combination of climate, different altitudes, terrain, and Trentino know-how make it not just a simple sparkling wine, but a highly esteemed mountain sparkling wine, increasingly recognized and awarded.

Despite its small size, the Trentino region is covered with 10,000 hectares of vineyards, with a percentage of grapes destined for sparkling wine production accounting for 8% and an annual production of 7 million bottles.

The vineyards benefit from different climates: from a mountain microclimate to the milder one of Lake Garda. Factors such as vineyard altitude and temperature variation play an important role in grape ripening, influencing the organoleptic characteristics of the wines.

The varieties cultivated for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The area of organic vineyards in Trentino is steadily increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards product healthiness.

Trentino, the homeland of Trento DOC bubbles, offers elegant and unique white wines, the result of cultivation in high-altitude areas and Trentino know-how, expressing the richness of the territory in every sip.

Roast goose stuffed is a dish from the rural tradition, rather easy to prepare and enriched with chestnuts and figs, potatoes and onions, or other vegetables. Rich in flavor, with excellent structure and aromatic persistence.
