RECOMMENDED COMBINATION

Villa Minelli's Prosecco is fresh and easy to drink, which is why it pairs very easily with many dishes. To be tried as an aperitif but also throughout the meal - it is particularly suitable for fish starters and even vegetable risottos for a vegan solution.


REFINEMENT

Grapes of the native Glera that grow on the hills of the province of Treviso, at an altitude between 150 and 200 meters above sea level. The soils are heterogeneous, clayey and also calcareous. Hand harvesting of the grapes with sorting directly in the vineyard, soft pressing of the grapes, static decantation and fermentation at a controlled temperature. This is followed by secondary fermentation with refermentation in an autoclave according to the Charmat Method. Refermentation in an autoclave at a controlled temperature, with the addition of selected yeasts for a slow refermentation of approximately 30 days.

We are in the Treviso area, where Prosecco is the main wine.

The grape variety that reigns supreme here is la glera , which may be present in purity or together with other berry varieties white more or less known as green , whitebait , perera , chardonnay , pinot blanc And grey but also black berry like pinot noir .

The Prosecco territories are mostly hilly, where working with machines is very difficult. The vineyards are cultivated and harvested practically everyone at hand . The hills originated millions of years ago from the lifting of the seabed.
Once, in fact, the entire area was below sea level, marine currents brought numerous debris to these areas which were deposited layer upon layer. So here it is marl , clays , sandstones And sludge .


Subsequently, during the process of orogeny, these seabeds emerged, thus giving rise to the various reliefs that make up the territory. Part of the hills, then, also underwent modeling by the dolomite glaciers that covered them: once they retreated, they left numerous sediments. Therefore, after a process that lasted millions of years, today we find different compositions of the subsoil: above a rocky layer there are various layers composed of clay, marl, mud, sand, conglomerates of limestone origin and sandstone.


CELLAR

The winery is located in the municipality of Villorba, in an area with an agricultural vocation, along the "Postumia", called "strada Regia" in the 16th century. Large traffic artery for travelers coming down from Germany to go to Venice, along which numerous taverns stood whose protagonist was wine. In the heart of Veneto, an ancient farmhouse from the early 1900s has been transformed, with a meticulous renovation, into a modern cellar.

The property has maintained the original aesthetics and the ancient layout, but has been equipped with cutting-edge equipment, which allows winemaking in separate batches with horizontal macerators, stainless steel tanks with temperature control. A basement was built for storage, in an optimal environment, to mature the wine, a room dedicated to aging in wood and a fruit cellar for the natural drying of the grapes on cane racks.

The winery cultivates nine hectares: alongside the youngest vineyards, 10-15 years old, two historic vineyards over 50 years old stand out, the company's flagship. The vineyard is managed with manual pruning and harvesting, very low use of pesticides and without the use of herbicides, for the most natural production possible.

Their wines are fresh, young, easy to drink, children of their land, which contain and enhance all the characteristics of flavor and freshness. The production consists of three whites, a Pinot grigio, a Prosecco and a Chardonnay to which are added a very fruity Merlot and a Cabernet. The flagship of the company, the fruit of the old vineyard, is the Merlot Vecchie Vigne.
