RECOMMENDED COMBINATION

Perfect for a fresh and elegant aperitif, to be sipped while tasting tasty, not too full-bodied dishes. Some examples? Carpaccio, canapés, salmon puffs, prawns in cocktail sauce, cured meats or even mature cheeses.


REFINEMENT

The grapes are harvested at the moment of perfect acid balance, vinified in white and fermented in steel. The wine remains on its fine lees until the moment of sparkling wine, made with the Charmat Method. The wine is then fermented in an autoclave for a few weeks and then remains refined with its yeasts for a few months.

TERRITORY OF ORIGIN

TERROR

The company is located in Veneto, at the foot of the Euganean Hills. In the region the presence of mountain chains and the vast portion of plains gives notable temperature variations between summer and winter, mitigated near Lake Garda and in the coastal area. Veneto is the leading region in Italy for wine production; It is also very rich in native vines, including Garganega, Trebbiano di Soave, Prosecco (or Glera) with white grapes, Corvina, Rondinella, Molinara and Raboso and the semi-unknown Turkish grape with black grapes.

From a soil point of view, Veneto has territories characterized by alluvial and volcanic soils, which allows the production of numerous types of wines, from light and drinkable ones, to full-bodied and important wines.

Specifically about the wines of the Euganean Hills, these were well known since ancient times, cited by Marziale in the 1st century AD, who wrote of the "Euganean districts with the hills painted and studded with vines". Currently there are approximately 2500 hectares of vineyards registered with the Colli Euganei DOC denomination.


CELLAR

The La Montecchia company has belonged to the Emo Capodilista family since the Middle Ages; it is located in Villa Emo Capodilista, at the foot of Colle La Montecchia. The company cultivates 30 hectares of vineyards, in the heart of the Colli Euganei DOC, between Selvazzano, with its historic vineyards, and Baone. Today it is managed by Count Giordano Emo Capodilista. The cultivation takes advantage of the climate mitigated by the sea: the wines produced by the company stand out for their power, refinement and elegance.

The centuries-old bond with the territory has pushed the Emo Capodilista family to embrace an eco-sustainable approach, avoiding the use of chemicals in the vineyard and using clean energy in the cellar. For this reason it recently won the EcoFriendly Award, for its commitment to projects to protect the territory and the vineyard, and for the implementation of plans aimed at energy saving. And finally for the production of wines that respect the environment, the health and well-being of consumers.
