👁 a beautiful yellow with a natural glaze due to the refermentation in the bottle;

👃🏻 fragrant, fruity and floral aromas emerge on the nose: white flowers and apple above all, to which an intriguing note of bread crust is added;

👄 on the palate it is soft and enlivened by a pleasant freshness. The sip is immediate and pleasant, and stands out for the mineral note typical of the terroir. A very drinkable wine, which closes with a slightly bitter finish typical of the grape.

This Garganega offers many matching solutions
Ideal as an aperitif, it is also pleasant throughout the meal. It prefers fish-based dishes, but has the complexity to match even more intense first courses, white meats and cheeses.


WINE MAKING AND REFINEMENT

100% Garganega di Gambellara, from a vineyard in Brovia and Monti di Mezzo, at 200 meters above sea level.
The soil is of volcanic origin, in the Monti di Mezzo and Faldeo sub-area. The grapes come from organic farming, are harvested by hand in October in crates: one part is poured whole into the press, to be subjected to soft pressing, the other left to dry. Fermented without the addition of any chemical additives, and rests on the yeasts until February.

cioto

A part of the must, rich in sugars and yeasts, is added to the sparkling base, immediately bottled. It rests on the lees for a few months before being put on the market.
The fermentation yeasts remain in the bottle and settle on the bottom. An excellent certified organic wine.

ORIGIN

TERROIR

The company is located in Gambellara in Veneto, a historic town for the cultivation of vines. It is characterized by the volcanic soils on which the garganega is cultivated with great success. It includes a DOCG, for the Recioto di Gambellara.


The Strada del Recioto includes the municipalities of Gambellara, Montebello Vicentino, Montorso Vicentino and Zermeghedo, in which itinerant walks are organized to discover the vineyards and the Garganega grapes, the variety of the territory, which produces the white, passito and dry wines of the DOC .


WINERY

Davide Vignato was born and raised in Gambellara, in the province of Vicenza. There he learned about the earth and the rhythms of nature by helping his father in the vineyard since he was a child. Founded his farm, in the territory he was the first to focus on organic, in fact being the first to bottle Gambellara DOC certified organic wines. A convinced choice, his, which bears fruit in the quality of its range of wines, small and very precious.

Their vineyards are in Gambellara, a volcanic territory. The farm produces natural wines capable of restoring the identity of a unique place in each glass. The lava columns formed by Monte San Marco - a now extinct volcano which is 500 meters from the cellar - have given rise to a deposit of black basalts that characterize the soils of this territory.

Just 35,000 bottles are produced per year, with great care from 16 hectares of vineyards, treated with practices such as green manure.
