FOOD PAIRING

Poulsard is a very broad and spicy wine that prefers dishes with good body, succulence and savoriness. It pairs perfectly with both first courses and main courses. Excellent with cured meats and cold cuts, it is perfect with white and red meats. To try it in a more original pairing, dare with a seared tuna fillet.

 
REFINEMENT

Pure Poulsard grown in vineyards near Arbois on a clay soil with a southern vineyard exposure. After manual harvesting and soft pressing of the grapes, fermentation takes place in steel tanks with frequent pumping over. Then the wine matures 8 months in tanks.

ORIGIN

TERROIR

We are in the Jura, a magical land distinguished by its Vin de Paille. The climate is semi-continental, and the alternation of contrasting seasons is influenced by the presence of the mountains, which condition temperatures, winds and rainfall. There are four zones: the plain, the plateaus, the high mountains, and the area known as Revermont. Here, insolation is rather limited, so the exposure of the vineyards, located on slopes with 40% inclination, is crucial. The winter is long but not particularly harsh, with wet, foggy days alternating with others of cold, dry wind, sometimes even dangerous for the vineyards.
The soils in the southern area are rocky and warm, formed of limestone with clays and marls, and are very suitable for vine cultivation: in fact, the grapes ripen favorably and occur about ten days earlier than those grown in the more northern areas.
The central area has clay and marl soils that yield savory and mineral wines. In the north, on the other hand, heavier marls and clays (difficult to work with) make the cultivation of black grape varieties more complex. The most widely grown grape varieties are Savagnin, Chardonnay, Pinot noir, Poulsard, and Trosseau.


WINERY

Jérôme Arnoux has been a winemaker almost since childhood, when he helped his neighbour in the vineyards. 

An important milestone was the ten years he spent working in the cellars of Stéphane Tissot. Jérôme now cultivates 17 hectares of his own vineyards and purchases additional grapes from established winemakers. His wines are now recognized on the national and international scene.
