NOTES FROM OUR SOMMELIERS

👁 intense ruby ​​with purple reflections;

👃🏻 the nose is fine, fresh, and is expressed with very ripe black fruits refreshed by a very intriguing touch of resin and balsamic;

👄 on the palate it is round, broad, enveloping, with smooth tannin and returns of fruit perceived on the nose, combined with spicy notes. Everything is balanced with a long and elegant finish.


RECOMMENDED COMBINATION

A Pinot Noir with great character, which requires pairing with important and fragrant dishes. Very satisfying when paired with French cheeses and also worth trying with truffled roast veal.

REFINEMENT

Grapes from vines over 30 years old that grow on soils characterized by sandstone, granite, white clay and gneiss. Pure Pinot Noir harvested with careful manual harvesting, aged in demi-muids (600 l barrels) for approximately three weeks. Without added sulphites.

TERRITORY OF ORIGIN

TERROR

We are in Alsace, land of exceptional wines. Here, vine cultivation was introduced by the Romans and its development increased in the following centuries. The production of Alsatian wines experienced two phases of decline, linked both to the Thirty Years' War and to the invasion of phylloxera, two centuries later. The climate is continental, with dry and sunny autumns that allow maximum concentration of sugar and of aromatic substances inside the grapes and the harvesting of the grapes at the height of phenolic ripeness.

Furthermore, you can also harvest the bunches in late harvest , when Botrytis Cinerea has carried out its wonderful action and enriched the berries with everything that will give life to unique, incredibly fragrant wines: the Sélection de Grains Nobles.

Another peculiarity of this territory is the sudden variability of the soils: an alternation of granite And limestone , with a myriad of solutions in which clay, shale and chalk are involved, capable of offering much more subtle and intense, fruity and mineral scents to the vines. Here, riesling, gewürztraminer, muscat d'Alsace, pinot grigio and pinot blanc are grown for the white grape, as well as pinot noir.


CELLAR


The winery has been among the organic pioneers in the region for 30 years. The transition to biodynamics took place in 1998. A logical progressive growth in the respectful and quality-oriented approach, with the desire to directly express the terroir. The biodynamic treatment in the vineyard and the few interventions in the cellar allow the added sulphites to be drastically reduced and even not added at all. A real bet if you consider that 90% of the production is made up of white wines.

Some examples? They treat vine parasites with natural products to preserve the ecosystem; they only use organic fertilizers (silica, compost, carbonate, basalt) or mechanical fertilizers (milling, ploughing, oxygenation…).

The different cuvées of Chaudes Meyer have an extraordinary purity and expressiveness.

The estate extends over 8 hectares of vineyards, in Nohalten, north of Sélestat.

Among their vineyards is the Grand Cru Muenchberg, made up of pink sedimentary sands made from 250 million year old rocks, some of which are of volcanic origin. They are lands that give their wines an unforgettable mix of finesse and character.
