Production and refinement

Single-varietal Pinot Noir grown in soils composed of marine sediments, limestone, marl, and clay.
The grapes are harvested by hand.

Alcoholic fermentation takes place in stainless steel vats over 12 days. Gentle pneumatic pressing is used to preserve the aromatic integrity of the grapes. The wine is then aged for 6 months in steel tanks, with a light filtration before bottling to ensure clarity and stability without compromising its sensory profile. Maturation in wooden barrels follows, lasting from 1 to 4 years depending on the vintage.

Organoleptic analysis

Visual exam

Bright ruby red, luminous and vivid.

Olfactory examination

Fresh and direct aromas of red and black fruits: crisp cherry, raspberry, blackberry, and blackcurrant, complemented by a light and subtle spiciness. A bouquet that plays on clarity and elegance.

Tasting

Soft and linear on the palate, with silky tannins well integrated into the body of the wine. Medium-bodied, agile, with a precise mineral finish that carries the sip to a dry and composed close. This is a wine that does not aim for power, but rather for grace.

Les Gardes

Les Gardes is a Burgundy-based winery founded with the aim of showcasing the region's great classics, Chardonnay and Pinot Noir. The grapes come from vines grown on clay-limestone and stony soils, benefiting from optimal sunlight and cool, ventilated nights—ideal conditions for producing elegant and mineral wines. The 15 hectares of vineyards are spread across some of the best plots in the Mâcon area, managed by a network of ten carefully selected independent winemakers.

The winery draws inspiration from the Wine Merchants' Guard, established in 1587 under Henry III to regulate the distribution of wine in France and ensure fair competition. This corporation, active until 1729, brought together merchants and retailers and laid the groundwork for the modern wine trade organization.

Les Gardes

In homage to the first form of protection for wine and its merchants, brothers Camille and Mathieu Paquet, already owners of Famille Paquet, founded Les Gardes. Complementary in their skills, Camille is dedicated to the vineyard and cellar work, while Mathieu focuses on the commercial side and exports.

Every bottle signed by Les Gardes is the result of collaboration with passionate winemakers and the desire to perpetuate French winemaking tradition with a contemporary outlook. These wines tell stories of terroir, people, and landscapes, while carrying forward, with respect and precision, the art of the Marchand de vin.

Burgundy

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Mâconnais

In Burgundy, further south of the Côte Chalonnaise, in the Mâconnais region, mainly white wines are produced, predominantly from Chardonnay grapes. Pinot Noir and Gamay are cultivated to a lesser extent.

The best wines of Mâconnais come from the villages of Mâcon, Pouilly-Fuissé, and Saint-Véran. Mâconnais accounts for 1/4 of the region's production and is known for the excellent quality-to-price ratio of its bottles.

In Mâconnais, there is also a small village called Chardonnay, just like the grape variety, although it is not certain whether the grape was named after the village or vice versa, in honor of the white grape that became the most famous in the world.

In the heart of Mâconnais, land of elegant white wines, Chardonnay reigns supreme.

Recommended pairings and dishes

Matching by concordance

Its softness and delicate fruity fragrance pair beautifully with dishes that are equally refined in aroma: simple meat preparations, pasta with white ragù, and savory vegetable and egg-based tarts. Light spices and red fruit notes resonate with recipes featuring naturally aromatic elements such as bay leaf, pink peppercorn, or thyme. Its elegance calls for dishes of matching sophistication.

Matching by contrast

Good acidity and slight tannins help balance the succulence of protein-rich dishes and the richness of certain cheeses. The mineral finish cleanses the palate, making it well-suited also for slightly salty or oily foods.

It pairs well with

Unsweetened red meats such as tagliata, roast beef, and grilled entrecôte; bloomy rind cheeses like Brie and Camembert; savory pies and cured meats. Also excellent with structured vegetarian dishes such as sautéed mushrooms or stewed lentils.

Carne Salada (salted meat)

A traditional, exquisite, and refined dish that is very typical of Trentino. It's also worth trying it enriched with mushrooms, which are equally local, for an explosion of flavors.

Fried Mushrooms

Fried mushrooms are a dish as simple as it is appetizing, perfect to serve in autumn as a tasty appetizer or substantial side dish: fragrant, flavorful, and very pleasant.
