Production and refinement

A wine that originates from a flat area formed by the alluvial cone of the Cellina stream. The soil is composed of a thick layer of alluvial sediments at the foot of the Dolomites. It's made purely from Pinot Grigio grapes, harvested by hand.

Following is a delicate pressing of the grapes, using vacuum presses. The resulting musts are then cleaned through dynamic decantation. After inoculation with selected yeasts, fermentation begins at controlled temperatures (14-16°C), with constant management of the fermentation dynamics. At the end of fermentation, the wine rests on its fine lees until bottling.

Russolo

The Russolo agricultural company was established in 1974 when Iginio and Sonia embarked on their winemaking project. The turning point came in 1990 with the acquisition of the vineyards in San Quirino, followed by the construction of the new cellar adjacent to the vineyard in 2000, the year the company permanently moved to the "lean lands."

In recent years, the two siblings Antonella and Rino have taken the reins of the company, always supported by their parents, and have introduced a change in style, favoring fresh, mineral, and fragrant wines.

Russolo

The significant presence of pebbles in the soil expresses great minerality driven by the "terroir," which in the case of Russolo wines is masterfully interpreted, with great wisdom both in the vineyard and in the cellar, resulting in excellent quality in both white and red wines.

All this is achieved across 17 hectares of vineyards.

Friuli Venezia Giulia

Friuli-Venezia Giulia has always been the land of great whites and has achieved extraordinary fame for what some call the "superwhites."

Recently, Friuli Venezia Giulia was the battleground for a community-level dispute with Hungary regarding the right to continue calling the wine produced with the Tocai Friulano grape "Tocai," causing confusion with the well-known Hungarian sweet wine Tokaji. Italy lost the case in 2007, and since 2011 wines produced with Tocai Friulano are respectively called "Friulano" in Friuli Venezia Giulia and "Tai" in Veneto.

The region is divided into a mountainous area to the north, hilly terrain in the pre-Alpine arc, an alluvial plain, and a coastal area.
The northern part of the plain is suitable for the cultivation of white grape varieties, while the southern part is more favorable for black grape varieties.
To the east, in the area bordering Slovenia, the plain extends to the foothills of the Karst: here viticulture is challenging due to the limestone rocks eroded by water, and often it is only possible on terraces supported by retaining walls made of sandstone blocks called "pastini."

Western Friuli

Western Friuli is a portion of the region characterized by its close proximity to the Dolomites. The microclimate is influenced by the significant temperature variation, and in fact, the climate resembles that of the mountain valley: winds coming down from the mountains deeply mark the territory. During the night, the elements synthesized by the plants during the day are used differently: at constant temperatures, they are used for leaf growth, while at lower temperatures, they accumulate in the berries, increasing acidity and aromatic load of the grapes.

An important designation is Friuli Grave DOC, shared between the provinces of Pordenone and Udine, where Chardonnay, Pinot Bianco, Pinot Grigio, Riesling Renano, Sauvignon, Traminer Aromatico, Verduzzo Friulano, Cabernet Franc, Cabernet Sauvignon, Carménère, Merlot, Pinot Nero, and Refosco dal Peduncolo Rosso are produced.

In the heart of Western Friuli, amidst the majestic Dolomites, the microclimate and fertile land give rise to the renowned wines of the Friuli Grave DOC designation.

Perch in Parchment

A very delicate and flavorful dish, freshwater fish baked in the oven, seeking pairings with light and fragrant wines to enhance all the flavors without overpowering them.

Raw ham

Typical and refined Italian cured meat, available in savory or sweet versions. The more flavorful variety pairs well with balanced red wines that have good acidity and sapidity, are low in tannins, and possess aromas of ripe fruit, dried flowers, and spices. The sweet version of prosciutto crudo, on the other hand, should be accompanied by a young, fresh, very smooth white wine that is full-bodied and rich in aromas.
