👁 a beautiful straw yellow with golden highlights;

👃🏻 on the nose it expresses freshness of flowers and fruit: above all: banana and pear syrup;

👄 on the palate it has a good salt-acid balance, long persistence and distinct minerality due to the valley of origin. 

FOOD PAIRING

Pinot Gris is a fresh wine with great balance and minerality. And perfect to pair with appetizers, first and second courses of fish and white meat.

 
REFINEMENT

This pure Pinot Grigio is grown in vineyards located in the hilly area of Roncà, on the slopes of the 2 extinct volcanoes Calvarina and Crocetta, east of Soave. After careful verification of the ripeness of the grapes, harvesting is done by hand generally in late August. After soft crushing, static decantation of the must and grafting of selected yeasts, alcoholic fermentation takes place at a controlled temperature of 13°C to safeguard the wine's fragrant characteristics. Ageing is for three months in stainless steel containers, with frequent batonnage of the noble lees once a week and resting for at least 45 days in the bottle.

ORIGIN

TERROIR

We are in Valpolicella, in the province of Verona among hills and from the valleys north of the city of Verona, Veneto. It stretches from the Adige River valley on its western side to the volcanic territories of the Soave production area to the east. Valpolicella is a controlled designation of origin (DOC - DOCG) area and includes 3 subzones: Valpolicella Classica, Valpantena, and Estesa. The landscape is extremely rich thanks to the presence of a morphologically varied territory that can be divided into three macro-areas: the mountainous limestone area, formed by the Lessini Mountains; the hilly belt, which houses most of the vineyard and vine area; and the valley floor area. Consisting of valleys that run north-south, Valpolicella is ideally presented as a fan of valleys starting from Verona. The land is predominantly hilly, with gentle slopes and watersheds at low elevations, and is dominated almost everywhere by vineyards, interspersed with olive and cherry trees. The unique and varied geological and climatic characteristics of the area are the basis of the great uniqueness and typicality of its wines.


WINERY

The Dal Cero brothers are distinguished by something rare: they don't miss a beat. Whether we are talking about the Tenuta di Corte Giacobbe in Roncà, the Tenuta Montecchiesi in Cortona, or the latest addition, the new property in Valpolicella. Their story begins in the 1930s with Grandpa Augusto and proceeds apace thanks to Nico, Francesca and Davide. Their wines have distinct personalities, but tasting, for example, two wines from the same estate, one feels a clearly recognizable and distinctive common thread.
The territorial imprint is what makes the difference, that territory that they so respect and value. The Dal Cero brothers are the most tangible sign of the continuity of work within a family: respect for the values of the land, sustainability, a direct relationship with the soil and its qualities.
