NOTES BY OUR SOMMELIERS

👁 bright straw yellow, with fine perlage;

👃🏻 on the nose it stands out for its delicate bouquet of fruity, spicy and floral hints (white peach and pineapple, grapefruit, ginger, white pepper, jasmine, wisteria and chamomile);

👄the palate is pleasant, lively and lightly delicate, with a fresh and savoury vein. Good persistence, with a finish reminiscent of almonds.

FOOD PAIRINGS

Obtained from a grape of absolute interest such as Grechetto Gentile, this sparkling Pignoletto DOC is the most typical of Bologna's wines; drinkability and fragrance combined with a fine bubble make it a perfect proposal both as an aperitif and for first courses. Try it with tagliatelle al ragu.

WINE-MAKING AND REFINEMENT

Manual harvesting of the grapes, picked in two stages: at the end of August and mid-September. Cold pressing of whole bunches and use of carbonic snow during vinification, carried out using the long, temperature-controlled Martinotti Method. Fermentation with continuous batonnage. Few bottles are produced each year: around 3000.

ORIGIN

TERROIR

We are in the province of Bologna, which includes territories of high vocation, which give rise to designations of origin and types of wine of absolute interest. Thus: Colli Bolognesi Classico Pignoletto DOCG, dedicated to wines made from at least 95 per cent Pignoletto grapes, produced in the foothill and mid-hill area between the valley of the Samoggia Valley and the valley of the Reno River and the smaller streams of the Samoggia, Lavino and Idice, between the provinces of Bologna and Modena. The Colli Bolognesi DOC includes various types of white and red wines, produced from local or international vines. Then: Colli d'Imola DOC, with red wines based on sangiovese, with barbera and cabernet sauvignon, while white wines are produced from pignoletto and chardonnay.

In addition: Reno DOC, shared with the province of Modena, with white wines from montù grapes,
pignoletto, albana and trebbiano romagnolo. And finally: Bianco di Castelfranco Emilia IGT, Rubicone IGT and Emilia IGT.

WINERY

The Lodi Corazza family has been involved in agriculture since the 18th century and has been producing wine since the end of the following century.

Today, they still produce with respect for the land and its biodiversity, according to integrated agriculture. The current production cellar was designed in 1988 by the engineer Corrado Corazza himself. Over the years, the Lodi Corazza winery has always remained family-run and has never abandoned cement containers for their thermal capacity and healthiness. Wood is only used on wines with sufficient structure to improve with ageing. Stainless steel is only used to froth the musts.

The vineyard is 18 hectares, included in the Colli Bolognesi DOC area: more than half of the vines have been replanted using ancient clones present on the farm, such as pignoletto, barbera piccolo, sauvignon and merlot. Weeding is mechanical, without the use of chemical herbicides, and the harvest is completely manual, with vinification carried out according to tradition and with great care.
