Production and refinement

100% Grillo harvested by hand on terraced vineyards between 20 and 30 meters above sea level, with vines growing on shallow, medium-textured volcanic soils. Yields are low (30 quintals per hectare).

Vinification of the grapes in stainless steel at controlled temperature followed by aging for 6 months, still in stainless steel, and then another 3 months in the bottle.

A beautiful bright straw yellow color.

Olfactory examination

On the nose, it expresses intense hints of Cantaloupe melon and apple, while hints of tangerine peel and thyme emerge in the background.

Tasting

In the mouth, it has a good body, very fresh, and enriched by a savory quality that evokes the sea in front of which the grapes grow.

Hibiscus

Hibiscus, the only winery on the island of Ustica to oversee the entire production process, produces wines of great character and freshness using native Sicilian grape varieties. These wines reflect the volcanic nature of the soils, the proximity to the sea, and the biodiversity of the landscape.

Among the native grape varieties, Zibibbo stands out, cultivated for generations on the island and vinified in both a dry and a passito version. The winery also produces three other labels: a white wine made from pure Grillo grapes, another white blend of Catarratto and Inzolia, and a rosé made from Nero d'Avola and Syrah.

Hibiscus

Hibiscus is a small establishment on a magical island, unique in carrying out the entire production process, from cultivation to winemaking, on its own land in Ustica. The wines, tasting of sea and volcanoes, preserve all the virtues and flavors of the native grapes of the area. Production is closely tied to the territory, which is unique but also rugged, requiring the use of practices suitable for its preservation. As Margherita and Vito affirm, "Living on an island is a challenge but also a privilege, like everything that is truly interesting."

Sicilian wine territory is now considered a true continent, thanks to its pedoclimatic variability and rich biodiversity. It is located in the center of the Mediterranean and in the so-called "northern sunbelt," an area between the 30th and 50th parallels north and the 30th and 40th parallels south, where the best conditions of brightness and temperature for vine cultivation are found.

On the smaller islands, given the high temperatures and windy conditions, the typical training system is the "alberello" and its "mixed" versions (for example, on the island of Pantelleria), as well as the "Tendone" system. In the rest of Sicilian territory, however, more than half of the vineyards use espaliers and contre-espaliers. In Sicily, wines with a long history are born, such as Marsala, but also fragrant dessert wines like Passito di Pantelleria and Malvasia delle Lipari, not to mention Moscato di Noto and numerous robust red wines and interesting white wines. There's also Nerello Mascalese, climbing the slopes of Mount Etna.

Ustica

Ustica, a municipality in the province of Palermo, is a small island known for its "heroic" viticulture. Situated at an altitude of 49 meters above sea level, Ustica is renowned for its vineyards and the production of high-quality wines, thanks in part to the volcanic origin of its soils.

Ustica benefits from its proximity to the sea and the saline breezes that impart a characteristic minerality to the local wines. The few local producers have carefully chosen the best locations for their vineyards, ensuring quality grapes suitable for the production of distinctive wines that meet the high standards of the province of Palermo.

The municipality of Ustica boasts the following denominations of origin: Sicilia DOC and Terre Siciliane IGT.

The proximity to the sea and the saline breezes benefit the local wines, imparting them with a characteristic minerality.
