👁 a veiled straw yellow;

👃🏻 on the nose it expresses a fresh and fruity bouquet (yellow fruits above all) enriched by notes of Mediterranean scrub;

👄 the palate is decidedly pleasant: drinkable, fresh and mineral, it closes on an intriguing almond finish.

FOOD PAIRINGS

A decidedly drinkable, savoury, fresh and fragrant Bombino, which goes perfectly with not too structured dishes such as first and second courses of fish. A tip? Spaghetti with squid ink.

WINE-MAKING AND REFINEMENT

From vines aged between 10 and 20 years, organically grown. Pure Bombino bianco re-fermented in the bottle according to the Ancestrale Method, only with indigenous yeasts. No clarification or filtration, hence the colour is (deliberately) veiled. The deposit in the bottle can be left at the bottom, but if shaken, it is able to give additional taste and olfactory sensations.

In the immense fields of the Tavoliere delle Puglie, among wheat, tomatoes and olive trees, the cultivation of vines plays a crucial role in the landscape and the economy of the area.
Here, the art of making wine has ancient origins: the San Severo countryside is a land particularly suited to grape cultivation thanks to its mild, breezy climate and the conformation of the land in which the plains alternate with gentle hillsides.
San Severo DOC was the first denomination in Apulia. While the entire region is a land of great wine-growing tradition, one of the most important areas is the province of Foggia, where white bombino, uva di Troia, montepulciano and falanghina grapes are mainly grown.
Bombino bianco, in particular, has been cultivated in Apulia for a long time, perhaps imported from Spain. The name is said to derive from the shape of the bunch, reminiscent of a child with outstretched arms. If instead the origin of the name came from Spanish, bombino would derive from 'bovino', meaning 'good wine'.
The vine is present in Apulia, especially in the Foggiano area, and is included among the varieties suitable for the production of San Severo Doc.

WINERY

We are located in San Severo, in the province of Foggia.
Starting from a deep family connection with vineyard and olive farming, in 2010 Antonio Demanio started the renovation of an old farmhouse and in 2013 Tenuta Demanio was born with the processing of the first grapes.
The winery had a tradition started by Antonio's grandfather, which had been interrupted in the 1970s with the advent of cooperatives: at that point, processing was suspended in favour of agriculture. But for the past ten years or so, Antonio has concentrated all his energies on growing the business and starting to produce wine and oil again.
From the very beginning, the choice was to use methods that respect the environment and the grapes, following organic and traditional methods in both the vineyard and the cellar.
Today, Tenuta Demanio produces five labels with a completely respectful approach: as little phytosanitary intervention as possible, spontaneous fermentation in the cellar, no clarification or filtration, and great attention to quality.
The estate consists of around 35 hectares of olive groves and vineyards.
