👁 of a beautiful intense ruby red;

👃🏻 on the nose the aroma is dominated by wild berries, while the finish is slightly floral;

👄 on the palate it is savory, dominated by the fruit, accompanied by a very nice freshness. The palate is broad, harmonious, and retains the "verve of the mountain".

Ombra del Falco is a fruity, harmonious, persistent wine characterized by a present but not intrusive tannin. This is why we suggest to pair it with food with succulence, aromatic persistence and intensity. Ideal with boiled meat mixed with horseradish and mashed potatoes or homemade tagliolini with slow cooked ragù.

 

WINE-MAKING AND REFINEMENT

The most complex wine of Crodarossa. L'Ombra del Falco Vigneti delle Dolomiti comes from Merlot 100% from overripe grapes, harvested strictly by hand. Soft destemming and fermentation at a controlled temperature. The wine then ages for twelve months in tonneau, acquiring softness and dynamic structure.

ORIGIN

TERROIR

We are in the Belluno area, in the Veneto, where little and excellent wine is produced, being more widespread the productions of beans, corn, barley, pumpkin and honey. Despite this, in recent years the wine production has been resumed, also with the recovery of ancient indigenous varieties. Currently there are about ten farms that cultivate vineyards in the province of Belluno; some have chosen to focus entirely on native and rare Bianchetta and Pavana grapes while others have preferred to diversify local vines with international ones.

 

WINERY

The Crodarossa estate is located in Colderù, a hamlet of Lentiai on the left side of the Valbelluna: below the Piave flows, majestic and wide. The view is spectacular with vineyards that seem to be "sentinel" to the Piave. The "croda" in local dialect is the rock, the red one of the Prealps of the Dolomites which gives all the characteristic scents of mountain wines to the bottles of this spectacular winery. Crodarossa was born in 2013 from the inspiration of Paolo Remini, with a degree in agriculture who decides, also supported by his wife Martina Vergerio, to start with a project immediately aimed at sustainability.The immediate choice was to prefer resistant vines (PIWI) to significantly reduce the use of plant protection products: Paolo has two children, is sensitive to the issue of eco-sustainability and knows how essential everyone's health is! Since the first year, great strides have been made, and today the company is certified organic.The first two hectares of vineyards are planted with Solaris, some rows of Souvigner Gris: to these is added a small vineyard in Feltre where ancient vineyards of Pavana are recovered, a native variety that grows right on the stones left by the Piave. They produce an interesting range of wines, including a sparkling Classic Method, two other very interesting sparkling wines, an elegant white from Souvignier Gris and two red wines, one from resistant vines (Cortis) and a more complex one from Merlot grapes.
