Production and refinement

From a vineyard rooted in medium-textured volcanic tuff, harvested by hand between late September and early October.

Fermentation in steel tanks with the skins for 9 months, followed by 12 months aging in old barriques.

Olfactory examination

On the nose, it is marked by intense, ripe, and broad aromas: quince paste, zabaglione, cinnamon, and dried apricot.

Tasting

On the palate, it is flavorful, full, and savory, with a noticeable tannicity due to the long maceration. It finishes with a long, herbaceous aftertaste.

Sassotondo

Nel 1990 Edoardo e Carla arrivano a Sovana, in provincia di Grosseto, trovandovi un ettaro di vigneto, una casa scassata, 72 ettari di terra abbandonata da anni. Se ne sono innamorati e hanno avviato una cantina molto speciale. Al 1997 risale la loro prima vendemmia e da allora rielaborano di continuo il loro progetto per renderlo sempre più sostenibile.

Sassotondo

L’azienda si trova tra i comuni di Sorano e Pitigliano, sulle pendici del bacino vulcanico di Bolsena dove la presenza del tufo è ininterrotta. Questa caratteristica geologica, di origine vulcanica, rend e i loro vini minerali e di grande struttura.

Tuscany

Tuscany is one of the most important Italian regions for wine, famous worldwide for its renowned labels. Here, wine truly has been part of history and culture for centuries, as far back as the 14th century with the establishment of the "Lega dei Vinattieri" (Wine Merchants Guild).
The Tuscan landscape also tells the story of the territory's strong winemaking vocation: from the hills of Chianti and the Etruscan Coast to the panoramas of Val d’Orcia and Val di Chiana, kilometers of splendid vineyards stretch out before our eyes, producing excellent wines.

Tuscany is one of Italy's most suitable regions for the production of quality wines and has conquered world markets since the 1980s. Bathed by the Ligurian Sea and the Tyrrhenian Sea, it has predominantly hilly terrain with a temperate climate, mild winters, and cool summers.
The various types of grapevines cultivated in Tuscany are greatly influenced by the soil on which they grow, ranging from sandy soils in the west to tuffaceous soils, and even clayey and calcareous soils.
A special mention goes to "galestro," a type of local soil that also gives its name to a wine from the Chianti area.

Maremma

La Maremma Toscana si trova nella parte meridionale della Toscana, nella provincia di Grosseto. Questa zona è delimitata a ovest dal mar Tirreno, a nord dalla provincia di Livorno, a sud dalla provincia di Viterbo e a est dalle province di Pisa e Siena.

I vitigni principali coltivati nell'area sono Sangiovese, Ciliegiolo, Canaiolo nero, Alicante, Trebbiano toscano, Ansonica, Malvasia bianca lunga e Vermentino, con aggiunta di varietà internazionali come Merlot, Cabernet Sauvignon, Syrah, Chardonnay, Sauvignon e Viognier.

I vini bianchi e rossi sono tendenzialmente prodotti con tecniche tradizionali. I rosati sono principalmente da Sangiovese e Ciliegiolo, mentre il novello è fatto con Sangiovese. Gli spumanti sono realizzati con Ansonica e Vermentino, utilizzando sia il metodo Martinotti che quello tradizionale. I passiti sono ottenuti da uve appassite con il metodo "vinsanto" o da vendemmia tardiva, e possono essere bianchi o rossi, a seconda delle varietà utilizzate.
