NOTES BY OUR SOMMELIERS

👁 a beautiful pale pink;

👃🏻 the nose is intense, and expresses hints of berries, currants and balsamic herbs;

👄 on the palate it is very well balanced with good acidity, flavor and persistence. The perlage is important and very present, for a very taut sparkling wine, full of a tension that develops in aromas that recall pomegranate, clementine and red flowers such as violets and violets. A beautiful acidity is intertwined with marked minerality.


FOOD PAIRINGS

This Classic Method from Pinot Noir is characterized by fresh notes. In the mouth the bubble has perfect acidity and pairs well with fairly persistent first courses. Perfect with spaghetti with shellfish.

 
WINE-MAKING AND REFINEMENT

This Classic Method is produced only in favorable years.
The grapes, 100% Pinot Noir, are harvested in 18 kg crates and only the first pressing is held. Short maceration of 3/4 hours on the skins in order to obtain the typical pink color. The wine remains on the fine lees until the moment of tirage.

ORIGIN

TERROIR

The winery is located in San Damiano al Colle, in the Eastern Oltrepò Pavese area. It is an ideal area for the cultivation of vitis vinifera, in particular for vines such as Pinot Noir, Croatina and Chardonnay. The Oltrepò hills offer a landscape continuum of great attraction and represent the third largest Italian area by surface almost completely covered with vines and with mainly denomination of origin productions. The variety of the territory, the proximity of the sea and the presence of rivers and streams affect the climate, mild and temperate, with excellent excursions between night and day, especially in the summer.


WINERY

The winery was founded in 1873, in the municipality of San Damiano al Colle; the business was then carried on by successive generations until Alessio Brandolini, just graduated, took over the management, full of ideas and enthusiasm.

The vineyards are located for the most part in the municipality of San Damiano al Colle, and to a lesser extent in the near Rovescala and Montù Beccaria, for a total of 9 hectares. The cultivated grape varieties are: Barbera, Croatina, Uva rara, Pinot Noir, Malvasia, Riesling, Chardonnay. Synthetic fertilizers are not used in the vineyard and in the cellar they use techniques such as cryomaceration, low temperature fermentation and long contact with the skins, in order to best extract the aromatic substances naturally present in the grapes.
