Production and refinement

From a vineyard located at 420 meters above sea level, facing south. Harvest of the grapes (pure Nero d'Avola) at perfect aromatic and polyphenolic ripeness.

Destemming of the grapes and alcoholic fermentation with the skins for 6-8 days at 22-24°C, followed by malolactic fermentation with selected bacteria, and aging for 2 years in 25-hectoliter barrels.

A beautiful intense ruby red color with violet reflections.

Olfactory examination

On the nose, it is intense and enveloping, with fruity notes of black currant, wild strawberry, and pomegranate.

Baroni di Pianogrillo

The name given by the locals of Monte Maggiore to the male wild boar ('u verru) and a friendship formed at school in the 1960s led five friends to transform a gentle slope, overrun with brambles, into a company that produces organic wine and olive oil.

This initiative found its greatest expression in the discovery, recognition, and preservation of the Coda di Pecora grape variety, of which they are the sole producers, aiming to enhance its historical heritage and reintroduce the traditions of the region encapsulated in this unique variety.

Baroni di Pianogrillo

Alongside Coda di Pecora, the Baroni di Pianogrillo cultivate other historic grape varieties such as Pallagrello and Casavecchia.

Cesare Avenia, now the sole owner, acts as an ambassador for these wines to bring the essence of his Caserta to the world. All of this is achieved in just 5 hectares of vineyards.

Sicilian wine territory is now considered a true continent, thanks to its pedoclimatic variability and rich biodiversity. It is located in the center of the Mediterranean and in the so-called "northern sunbelt," an area between the 30th and 50th parallels north and the 30th and 40th parallels south, where the best conditions of brightness and temperature for vine cultivation are found.

On the smaller islands, given the high temperatures and windy conditions, the typical training system is the "alberello" and its "mixed" versions (for example, on the island of Pantelleria), as well as the "Tendone" system. In the rest of Sicilian territory, however, more than half of the vineyards use espaliers and contre-espaliers. In Sicily, wines with a long history are born, such as Marsala, but also fragrant dessert wines like Passito di Pantelleria and Malvasia delle Lipari, not to mention Moscato di Noto and numerous robust red wines and interesting white wines. There's also Nerello Mascalese, climbing the slopes of Mount Etna.

Ragusa

Ragusa is one of the nine provinces in the region of Sicily, particularly renowned for its wine production.

The Cerasuolo di Vittoria DOCG is the only controlled and guaranteed designation in Sicily, reserved for red wines produced with Nero d’Avola (Calabrese) grapes, comprising 50-70%, and Frappato grapes, comprising 30-50%. The production area of Cerasuolo di Vittoria DOCG and Cerasuolo di Vittoria Classico DOCG encompasses a vast region that includes territories within three neighboring provinces: Ragusa, Caltanissetta, and Catania.
