Nerello Mascalese and Cappuccino are grape varieties that express themselves with intensity and persistence. This is red that loves succulent food, with a great structure and beautiful aromatic complexity. Perfect with stewed red meat, game, roast meat, pasta with meat sauce and aged cheeses.

 
WINE-MAKING AND REFINEMENT

A Nerello Cappuccio and Mascalese grown in pre-phylloxera vines with an age of up to 150 years, trained as sapling on sandy, volcanic soils, rich in minerals and located on the north side of Etna at a height of 750 meters above sea level. Following a manual harvest and a soft pressing-destemming, the fermentation takes place with indigenous yeasts in steel and prolonged maceration for 12 days. Subsequently the wine is aged in cask and in barriques.

ORIGIN

TERROIR

Etna is a wine region that offers unique wines in the world panorama.Thousands of years of powerful eruptions, complex transformations, and volcanic events still active today, have made the soil that welcomes the vine the unifying product of that exclusive and unattainable complexity that becomes the founding heritage of a wine increasingly famous all over the world. In the Etna area there are substantial microclimatic differences between one area of the volcano and another, due to the peculiar position of Etna and its morphology. The territory, the microclimate, the volcanic soil rich in minerals, together with the peculiarity of the indigenous vines, for the production of unique wines.The wine of Etna, in fact, was the first Sicilian table wine to obtain the recognition of the Controlled Designation of Origin (DOC).


WINERY

We are in Contrada Mognazzi, Costiglione di Similia, in the province of Catania. Mauro Paoluzi conducts his vineyard on Etna in a natural and organic way, without using synthetic chemicals, respecting the landscape and nature. Etna is an incredible and extreme territory: the lava flows have left a very variable terrain, the microclimate is marked by extreme temperature ranges and drought is felt in the volcanic and sandy soils. Carricante, Minnella, Grecanico, Malvasia, Visparola for the whites are grown, and Nerello mascalese, Nerello cappuccio and Alicante for reds: these are the vines historically grown in the territory. The viticulture practiced by the winery is a primordial and tiring viticulture. The vine is trained as a sapling, at high density. The care of the vines is manual and addressed to each individual plant. The harvests take place late, only when perfectly ripe, and only healthy bunches are collected, to give life to great wines in which you can breathe the flavor of Etna.
