👁 A beautiful straw yellow, with greenish reflections;

👃🏻 the nose is broad and intense, characterized by persistent aromas, especially of white flowers and peach;

👄 on the palate it is fine and elegant, savory and mineral, with an excellent balance between softness and freshness.


FOOD PAIRINGS

It goes perfectly with fish and land appetizers and is excellent with anchovies and sardine terrine. For a vegan solution, try it paired with raw vegetables.


WINE-MAKING AND REFINEMENT

Vine of ancient origins from Burgundy but today cultivated, in France, only in the western Loire Valley. Grapes from soils with granite, characterized by shallow soils with coarse compounds. Strictly manual harvest, aging on fine yeasts during the course of the winter.

ORIGIN

TERROIR

We are in the Loire, a legendary region for its wines and its castles. In the Loire Valley we can talk about viticulture starting from the fifth century BC, with the Romans who founded Paulica Villa, the current Pouilly-sur-Loire, and planted the first vineyards in Saumur and Sancerre. The climate is very varied: on the coast the temperatures are milder, the humidity is good but sometimes dangerous spring frosts occur, while as you move inland the climate becomes more and more continental, with short summers and warmer, colder winters and increasing temperature variations.

The soils are also very different from one area to another: ranging from granites mixed with sand in the Muscadet area, to red schists and slate in the Anjou area, to gravel and sand from Chinon. And especially the chalk of Saumur and Vouvray, which gives wines rich in minerality, and the clay and chalk of Sancerre and Pouilly. Vines such as melon de Bourgogne, sauvignon blanc, chenin blanc, chasselas, gros blanc, cabernet franc, gamay, grolleau and cabernet sauvignon are grown here.

WINERY

It was in 2001 that Jérémie, oenologist from Muscadet, took over the reins of the family estate, already active for three generations.Today the vineyards extend over four different terroirs: the Domaine de la Chauvinière, atop the Coteaux de la Maine, on the granite of Château Thébaud; the Clos des Montys on the hill of the Goulaine marsh; the Château de la Bretesche in the Sèvre area; the Templerie, a well-ventilated hill on the Clisson granite.

The winery works in organic, half certified and half in conversion phase. Even in the wineries the approach is respectful and attentive: only indigenous yeasts, cutting-edge technologies, long maturation on the yeasts and particular attention to the separate vinification of the grapes from the different types of soil, to obtain the best expression of each individual terroir.
