Production and refinement

A blend of local grapes (Uva di Troia, Sangiovese, Montepulciano, Bombino Bianco) grown on limestone soils at 300 meters above sea level. Yields in the rows are kept low, and vineyard work follows organic farming practices.

The grapes are gently pressed, and the must ferments in steel tanks for seven days. Aging takes place in steel for six months, followed by bottling.

Lucera Petrilli

Paolo Petrilli has established himself in the quality market with the company he founded in 1990, where he crafts tomatoes grown on-site and derived from the recovery of local grape varieties, which have been replaced elsewhere by international varieties due to their higher productivity.

Since 2002, Paolo has restored the 11 hectares of vineyard on the property: the Nero di Troia is the predominant variety, followed by Sangiovese, Montepulciano, Aglianico, Bombino Bianco, and Verdellino. In addition to tomatoes and grapes, he also produces durum wheat, all grown organically.

Lucera Petrilli

Paolo Petrilli's winery expresses outstanding quality due to the great attention given to the care of the vineyard and the cellar.

His wines reflect a unique terroir and a history rich in ancient traditions and authenticity.

Puglia

The sun, the sea, and the wind: three characteristics of Puglia that give rise to intense and unmistakable wines.

Puglia

The introduction of viticulture in Puglia dates back to antiquity when the Greeks colonized the region and brought with them the culture of the vine. The cultivation spread further thanks to the expansion of the Roman Empire and Christianity, which promoted wine production for liturgical celebrations. Over the centuries, Puglian viticulture has evolved, with the cultivation of native varieties such as Primitivo, Negroamaro, and Bombino Bianco, becoming an important sector of the local economy.

Today, Puglia is one of the leading wine-producing regions in Italy in terms of hectoliters produced, with increasing attention to product quality and national and international recognition.

Puglian vines grow in sunny and windy areas, with a Mediterranean climate characterized by very hot and dry summers and mild but rainy winters.
These climatic conditions, combined with the vast coastal area with the breeze and the influence of the sea, create an ideal microclimate for vine cultivation. In particular, the strong temperature variation between day and night during the ripening months of the vine gives the grapes a unique and distinctive character.
The Puglian vineyard has been designed based on pedoclimatic conditions, and the native grape varieties cultivated here are able to adapt to the arid and stony soils of the region, which are typically limestone in the Salento area (where fresh and acidic wines are produced) and clayey in the north of the region (where production focuses on structured and tannic wines).

San Severo

In the vast fields of the Tavoliere delle Puglie, among wheat, tomatoes, and olive trees, viticulture plays a crucial role in the landscape and economy of the area.

Here, the art of winemaking has ancient origins: the countryside of San Severo is particularly suited to grape cultivation thanks to the mild and breezy climate and the terrain where the plain alternates with gentle hilly slopes. The San Severo DOC was the first denomination in Puglia. One of the most significant areas for viticulture is precisely the province of Foggia, where mainly Bombino Bianco, Uva di Troia, Montepulciano, and Falanghina are cultivated.

Bombino Bianco has been cultivated for a long time in Puglia, perhaps imported from Spain. The name would derive from the shape of the cluster, which resembles the shape of a child with outstretched arms. If instead, the origin of the name came from Spanish, "bombino" would derive from "bovino," meaning "good wine."
The grape variety is mainly present in the Foggia area of Puglia and is listed among the varieties suitable for the production of San Severo DOC.

In the lush Tavoliere delle Puglie, viticulture intertwines with the millennia-old history and varied territory, giving life to San Severo DOC and celebrating varieties like Bombino Bianco, a grape rich in history and tradition.
