FOOD PAIRINGS

Morellino is a very structured, tannic and persistent wine: this is why it goes very well with dishes with succulence, intensity and persistence. It pairs well with important meat dishes such as roasts and game.

 
WINE-MAKING AND REFINEMENT

A wine in which the typical characters of Sangiovese are clearly recognized, accompanied by the Alicante which strengthens its color and taste. The cultivation method is strictly organic. The manual harvest, the soft crushing-destemming. Fermentation is carried out at a controlled temperature with maceration ranging from 18 to 20 days in steel: in this period frequent pumping over is carried out to extract all the components of the wine. After 6 months in steel, 6 to 9 months in second passage French barriques follow.

ORIGIN

TERROIR

The winery is located in Scansano, the homeland of Morellino. The production area of Morellino di Scansano includes the hilly area of the province of Grosseto, between the Ombrone and Albegna rivers, including the entire territory of Scansano and part of Campagnatico, Grosseto, Magliano in Toscana, Manciano, Roccalbegna and Semproniano. The soils are varied and wide, in the western part there are sandstone soils of a boulder or stone type, while in the eastern part, in correspondence with the limestone and clayey formations, it appears more articulated. The soils are generally not very deep, with a rocky substratum in various cases outcropping, and it allows the production of quality wines.

 

WINERY

Montecivoli was born in 1992 when the farm from which it takes its name was bought by the current owners: Decio Oberholtzer and Francesco Prosperetti. Between 1999 and 2003 7 hectares of vineyards are planted which fall within the DOCG Morellino di Scansano: the choice of varieties, the systems and the efforts of the winery are all aimed at obtaining typical wines of impeccable quality. For this reason, alongside the Sangiovese, the Alicante is chosen, a variety strongly rooted in Maremma, while the low planting density allows the total absence of irrigation. The vineyards have always been cultivated with organic farming. Morellino Montecivoli has a vinification in steel, with a passage of about 9 months in barrique of 4-5 years, to be bottled after about 20 months from the harvest.
