TERROR
We are in Languedoc Roussillon, one of the largest and most productive regions in all of France, with production that has increasingly focused on quality in recent years. The climate is Mediterranean and warm, in France it is one of the most favorable for the cultivation of vines, even if some areas are quite cool, such as the hills of Minervois and Limoux, thanks to the slightly higher altitude. The soils are mostly calcareous, schistose and stony, which form the characteristic garrigues, a landscape rocky interspersed with lush Mediterranean scrub. In these soils syrah and carignan grow well and produce rich wines structure , tannins And flavor . In the plains the soils are alluvial and fertile and mainly grenache, cinsault and muscat are grown, obtaining wines richer in alcohol
CELLAR
In December 2015 Barbara and Pierre created Domaine Sibille in Laure-Minervois in the Aude region of France. Based on a small organic estate at the foot of the Montagne Noire, they discovered and decided to work just over 15 hectares of vineyards: 5 hectares with a protected designation of origin (PDO) Minervois and 10 hectares with a protected geographical indication (PGI) Pays d 'Oc. 60% of the area produces red and rosé wines and 40% white. The potential is 80,000 bottles, but the actual production depends greatly on the vintage. The soil expresses itself through a sandstone terroir, which brings freshness and structure to the wines. Only Viognier and Pays d'Oc are on clay-limestone soils.
They prefer manual harvesting for the reds, rosés and part of the whites, and work by gravity trying to reduce the added sulphites as much as possible. For reds, macerations can last up to two months and for whites, maturation on the lees naturally gives their bottles breadth and depth.
The Maison's wines are not austere, they are the fruit and expression of the terroir and the vines. They produce grenache, carignan, syrah, mourvèdre and piquepoul noir for their ability to give great rosé, marselan. Among the whites: viognier and roussanne, as well as the classic chardonnay.
